For The Base
- Self Raising Flour - you can use store-bought self raising flour or make your own
- Coconut - use fine, dried desiccated coconut
- Caster Sugar - this superfine sugar is perfect for baking
- Butter - use salted or unsalted butter
For The Topping
- Sweetened Condensed Milk - we recommend using full fat (not skim) sweetened condensed milk as it sets firmer than skim
- Lemon Juice - use freshly squeezed lemon juice. This helps to thicken and set the sweetened condensed milk.
- Passionfruit Pulp - you can use tinned passionfruit pulp or fresh passionfruit pulp.

Preparing Thermomix Passionfruit Slice is just SO easy!

Step 1 - Make The Base
Melt the butter in the Thermomix.
Add the self raising flour, caster sugar and coconut and mix until crumbly.
Note: the mixture will be VERY crumbly at this stage.
Press the mixture very firmly into a greased and lined 18cmX28cm baking tin and bake for 12 minutes or until lightly golden.
Step 2 - Prepare The Topping
Place the sweetened condensed milk, lemon juice and passionfruit pulp into the Thermomix bowl.
Mix on REVERSE until combined.
Pour over the top of the cooked base and place back into the oven for a further 15 minutes or until firm to the touch.
Allow to cool before cutting into pieces.

- Don't be concerned that your base mixture is crumbly - that's exactly how it should be at that stage!
- Press the base mixture down very firmly into the prepared tin.
- Grease and line a slice tin with baking paper to allow for easy removal of the slice once cooked and cooled.
- You can use fresh or tinned passionfruit pulp.
- Use freshly squeezed lemon juice.
- Bake until the slice is firm to the touch.
- Store passionfruit slice in the fridge for up to 1 week.
- You can freeze passionfruit slice for up to 3 months. Allow to defrost in the fridge before consuming.
FAQs
When mixing the topping, it's important to use the Reverse function so that the blades mix rather than chop. If you don't use Reverse, the passionfruit seeds will be chopped into tiny pieces!
Yes! This recipe is suitable for all of the models of the Thermomix.

Thermomix Passionfruit Slice
Equipment
- Thermomix
- Oven
Ingredients
- 150 g self raising flour
- 85 g desiccated coconut
- 115 g caster sugar
- 100 g butter
- 580 g sweetened condensed milk
- 100 g lemon juice freshly squeezed (approx 2 lemons)
- 100 g passionfruit pulp
Instructions
- Preheat your oven to 180 degrees and line an 18X28cm slice tin with baking paper.
- Place the butter into your Thermomix bowl and cook for 3 minutes, 60 degrees, Speed 2, or until the butter has melted.
- Add the self raising flour, desiccated coconut and caster sugar to your Thermomix bowl and mix for 20 seconds, Speed 4.TIP: scrape down the sides of you bowl half way through the mixing time.
- Pour the contents of your Thermomix bowl into your prepared baking tray (it will be crumbly) and press down with a spoon to flatten the surface.
- Place the baking tray into your oven and bake for 12 minutes or until golden brown. Reduce the temperature of your oven to 150 degrees.
- Put the sweetened condensed milk, passionfruit pulp and lemon juice into a clean Thermomix bowl and mix for 10 seconds, Speed 4, REVERSE to combine. Scrape down the sides of the bowl and mix for a further 5 seconds, Speed 4, REVERSE before pouring pouring the mixture over the top of your cooked slice base.
- Bake in the oven to bake for 15 minutes or until it is firm to the touch. Place the slice into the fridge for 2 - 3 hours to allow it to cool completely.
