    This Thermomix WeetBix Slice recipe is sure to be a hit with the whole family! You just need a few simple ingredients for this recipe, it is freezer friendly and also perfect for lunchboxes. This Weet-Bix Slice also make a great treat for your next birthday party or special event.

    This easy peasy Thermomix WeetBix Slice makes a great treat for the kids AND it's also freezer friendly.  It's a great afternoon treat and you can also pop a piece into the kids lunch boxes too.

    To make this classic slice, you will need:

    • WeetBix
    • Butter
    • Cocoa
    • Brown Sugar
    • Desiccated Coconut
    • Egg
    • Icing Sugar

    How to Make WeetBix Slice in a Thermomix:

    Our WeetBix Slice is seriously easy to make in your Thermomix:

    1. Crush the WeetBix bars and set aside until needed.
    2. Melt the butter.
    3. Add the crushed WeetBix, brown sugar, cocoa, coconut and egg and mix well.
    4. Place into a slice tray and bake.
    5. Once your slice is completely cool, make the icing and spread over the top.

    Tips for Making WeetBix Slice:

    • It's normal for some of the butter to pool on top of the slice when it comes out of the oven.
    • When you are making this recipe, it's important to make sure you allow the slice to completely cool before adding the icing, otherwise it will soak into the slice and you will end up with a bit of a mess.
    • If you want to help the slice cool more quickly, try popping it into the fridge or freezer.
    • To store, place in an airtight container and store in the fridge for up to 7 days.
    • This slice can be frozen.
    What is Weet-Bix?

    For those of you not familiar with WeetBix, it's a popular breakfast cereal in Australia and New Zealand made from wholewheat and shaped in bars. If you cannot find 'WeetBix' you can also use Vita Brits or similar cereals.

    Equipment

    • 28 x 18cm slice tin

    Ingredients

    • 12 WeetBix 200 grams
    • 200 grams butter
    • 30 grams cocoa
    • 150 grams brown sugar
    • 30 grams desiccated coconut
    • 1 egg

    Chocolate Icing

    • 225 grams icing sugar
    • 1 tablespoon cocoa
    • 1 teaspoon butter
    • 2 tablespoon boiling water
    • 100s and 1000s

    Instructions

    • Preheat your oven to 160 degrees celsius (fan-forced) and line an 18 x 28cm slice tray with baking paper.
    • Place the weetbix into your Thermomix bowl and blitz for 10 seconds on speed 7 to crush. Transfer the crushed weetbix to another bowl and set aside until needed.
    • Without washing the bowl, place the butter into your Thermomix bowl and cook for 3 minutes, 60 degrees, speed 2 to melt.
    • Add the crushed weetbix, cocoa, brown sugar, coconut and egg to your Thermomix bowl and mix for 10 seconds speed 4. Scrape down the sides of your bowl and mix for a further 10 seconds, speed 4.
    • Transfer the mixture to your prepared slice tray and cook for 18 - 20 minutes, you want the slice to be firm to the touch.
    • Allow the Weetbix Slice to completely cool in the tin before preparing the icing. Place the icing ingredients into your Thermomix bowl and mix for 30 seconds, speed 3 to combine. Scrape down the sides of the bowl and mix for a further 20 seconds, speed 3 or until smooth.
    • Pour the icing over the completely cooled slice and use a butter knife to smooth. Decorate if desired
    • Once the icing has set, cut the slice into pieces and enjoy!

    Notes

      This was a winner in our household!
      We used gluten free weetbix and it turned out absolutely fine. Quick and easy to make and perfect for school lunches or weekend snack ?
