Gluten Free - this cake can be enjoyed by everyone! Just make sure you also use a gluten free baking powder.
Versatile - the cake pictured was baked using a 22cm round springform cake tin, however you can use a slab baking tray, loaf tray or even bake this cake into muffins! Please note the cooking time will vary.

- Almond Meal - either store bought or blitz whole almonds.
- Oranges - two medium sized oranges.
- Caster Sugar
- Eggs - we use 70 gram eggs.
- Baking Powder - for a gluten free cake, use a gluten free baking powder.
How to Make a Whole Orange Cake in a Thermomix
Step 1. Cook the oranges.
Step 2. Drain the water and blitz the oranges. Allow to cool.
Step 3. In a clean bowl, combine the eggs and caster sugar.
Step 4. Add the remaining ingredients and mix to combine.
Step 5. Transfer the batter to a prepared cake tin.
Step 6. Bake until golden and cooked through when tested with a skewer.
Recipe Hints and Tips
- Ensure the oranges comfortably fit inside the simmering basket. If they are too large, the Thermomix lid will not close.
- It is important to allow the blitzed oranges to cool before adding to the cake batter. If still too warm, they will begin to cook the egg mixture.
- To make this a gluten free cake, ensure you use gluten free baking powder.
- Use either store bought or homemade Almond Meal for this recipe.
- This cake can be cooked in different sized cake tins, please note the cooking time will vary.
- To store, place in an airtight container and store in a cool, dry place. Consume within three days.
- To freeze, place in an airtight container and store for up to three months.
To cook whole oranges in a Thermomix, add 1500 grams of water to a Thermomix bowl and place the oranges into the simmering basket. Cook for 40 - 45 minutes at 100 degrees, speed 2.
Cooking the oranges helps to ease the bitterness of the orange rind. If your cake is too bitter, the oranges may have been undercooked or you may not have added the correct amount of sugar.

Thermomix Whole Orange Cake
Equipment
- 1 x 22cm springform tin
- 1 x Thermomix
Ingredients
- 2 Oranges
- 4 Eggs see notes
- 250 grams Caster Sugar
- 250 grams Almond Meal
- 1 teaspoon Baking Powder
Instructions
- Add 1500 grams of water to Thermomix bowl.
- Sit the two oranges inside the simmering basket and add to Thermomix bowl. Cook for 45 minutes, Varoma Temperature, speed 3.
- Carefully remove the water and place the oranges into the Thermomix bowl. Blitz for 10 seconds, speed 9. Transfer to a seperate bowl and allow to cool - see notes.
- Pre-heat oven to 180 degrees celsius (fan-forced). Grease and line the base and sides of a 22cm springform tin with baking paper.
- In a clean and dry Thermomix bowl, insert the butterfly attachment. Add the eggs and caster sugar. Mix for 1 minute, speed 3. Scrape down the sides of the bowl and mix for a further 1 minute, speed 3 or until the mixture is pale and creamy.
- Add the remaining ingredients and mix for 10 seconds, speed 4. Scrape down the sides of the bowl and mix for a further 10 seconds, speed 4.
- Transfer the batter to the prepared cake tin and gently smooth the surface. Bake for 45 - 50 minutes or until golden on top and cooked through when tested with a skewer.

I am thinking of trying this recipe with limes instead of oranges. Any reason why this wouldn’t work? Would need to vary number of limes & shorten the time for boiling the fruit.

This turned out so tasty! The only modification I made was to add 1tsp vanilla essence, otherwise I followed the recipe as written. I’ll be adding this recipe to my regular rotation!
