It takes just 10 minutes to prepare this simple slice made from pantry staples.

    Pieces of creamy passionfruit slice.

When it comes to good old fashioned slice recipes, things don't get much more popular than baked passionfruit slice!

With its creamy sweetened condensed milk and passionfruit topping and that classic crunchy baked base, this slice is the perfect afternoon tea treat.

Just like our Thermomix Jelly Slice, Caramel Nut Slice and Mars Bar Slice, this passionfruit slice will bring back so many childhood memories.

Why You're Going To Love This Recipe

Our Thermomix Passionfruit Slice is a 'must make' recipe. Trust us!

    • Quick & Easy - it takes just 10 minutes of active preparation time to make this slice. The hardest part is waiting for it to cook!
    • Made Using Basic Ingredients - with the exception of the passionfruit pulp, all of the ingredients in passionfruit slice are pantry and fridge staples... making this a very budget-friendly recipe.
    • Perfect For Afternoon Tea - the ultimate treat to enjoy with a cuppa!
    • Suitable For All Thermomix Models - this slice recipe can be made in all of the Thermomix models.

    What You Need

Please scroll to the recipe card at the bottom of the post for ingredient quantities and the full detailed method.

Raid your fridge and pantry... you'll more than likely find that you already have the ingredients sitting there!

    The ingredients for passionfruit slice.

    For The Base

    • Self Raising Flour - you can use store-bought self raising flour or make your own
    • Coconut - use fine, dried desiccated coconut
    • Caster Sugar - this superfine sugar is perfect for baking
    • Butter - use salted or unsalted butter

    For The Topping

    • Sweetened Condensed Milk - we recommend using full fat (not skim) sweetened condensed milk as it sets firmer than skim
    • Lemon Juice - use freshly squeezed lemon juice. This helps to thicken and set the sweetened condensed milk.
    • Passionfruit Pulp - you can use tinned passionfruit pulp or fresh passionfruit pulp.

    Step By Step Instructions

Preparing Thermomix Passionfruit Slice is just SO easy!

A perfect recipe for beginner bakers.

Please scroll to the recipe card at the bottom of the post for ingredient quantities and the full detailed method.

Step 1 - Make The Base

Melt the butter in the Thermomix.

    Melted butter in a Thermomix.

Add the self raising flour, caster sugar and coconut and mix until crumbly.

Note: the mixture will be VERY crumbly at this stage.

Press the mixture very firmly into a greased and lined 18cmX28cm baking tin and bake for 12 minutes or until lightly golden.

Step 2 - Prepare The Topping

Place the sweetened condensed milk, lemon juice and passionfruit pulp into the Thermomix bowl.

    Mix on REVERSE until combined.

    Expert Tips

Follow our top tips for the perfect Thermomix passionfruit slice!

    • Don't be concerned that your base mixture is crumbly - that's exactly how it should be at that stage!
    • Press the base mixture down very firmly into the prepared tin.
    • Grease and line a slice tin with baking paper to allow for easy removal of the slice once cooked and cooled.
    • You can use fresh or tinned passionfruit pulp.
    • Use freshly squeezed lemon juice.
    • Bake until the slice is firm to the touch.
    • Store passionfruit slice in the fridge for up to 1 week.
    • You can freeze passionfruit slice for up to 3 months. Allow to defrost in the fridge before consuming.

    FAQs

    What is the Reverse function?

When mixing the topping, it's important to use the Reverse function so that the blades mix rather than chop. If you don't use Reverse, the passionfruit seeds will be chopped into tiny pieces!

Can I make this in an older version of the Thermomix?

Yes! This recipe is suitable for all of the models of the Thermomix.

How many passionfruit will I need if using fresh passionfruit?

Approximately 3, however, this is dependent on how how pulp each passionfruit contains.

Is the base of this slice meant to be crunchy or cake like. I'm not sure if I've over cooked mine ?

My granddaughter loves this slice. I want to make it tomorrow but I only have limes. Would limes successfully set the top like lemon juice does?

Made a large batch of this when we had a glut of passionfruit - awesome! Shared it around at work & with the family - everybody loved it! Went to make more today, then realised I did not have enough coconut, so have done half coconut, half almond meal. Seems to be going OK - the test will be in the tasting! Thanks for the great recipe.
