Ingredients
Please note you will find a full list of ingredients and method in the recipe card below.
Milk - Full cream or skim milk can be used.
Caster Sugar - substitute with preferred sugar - eg raw or coconut sugar.
Cornflour
Vanilla Extract - substitute with vanilla essence if desired.
Eggs - we use 70 gram eggs.

How to make Thermomix Brandy Custard
Step 1. Place the milk, caster sugar, cornflour, eggs and vanilla extract into your Thermomix bowl and cook.
Step 2. Add the brandy and mix well to combine.

Step 3. Divide the Brandy Custard between serving bowls and enjoy!

Recipe Hints and Tips
Use either full cream or skim milk for this recipe.
Substitute vanilla extract with vanilla essence if desired.
We use 70 gram eggs when making this recipe.
For an extra kick, use 50 grams of brandy.
For a thinner custard, reduce the amount of cornflour to 20 grams. Alternatively, add an extra 30 grams of milk when adding the brandy.
Serve this Brandy custard immediately and do not freeze.
If halving this recipe, we recommend checking the custard after 6 minutes of cooking time.
This recipe will give you six side serves, if you are serving a full bowl of custard, you will get 3 - 4 serves.
FAQ
Brandy Custard contains alcohol and is recommended for adults.
You cannot freeze custard. The texture deteriorates significantly when thawing.

Thermomix Brandy Custard
Equipment
- 1 x Thermomix
- Serving Bowls
Ingredients
- 500 grams Milk
- 50 grams Caster Sugar
- 20 grams Cornflour
- 1 teaspoon Vanilla Extract
- 3 Eggs 70 grams
- 40 grams Brandy See Notes
Instructions
- Place the milk, caster sugar, cornflour, vanilla extract and eggs into a Thermomix bowl. Cook for 8 minutes, 90 degrees, speed 4.
- Scrape down the sides of the bowl and add the brandy and mix for 12 seconds, speed 4.
- Divide amongst bowls and serve immediately.
