Our Thermomix Yoghurt tastes just like Jalna vanilla yoghurt... but at a fraction of the cost and made from just 5 ingredients. This recipe can easily be doubled for larger families.
For our family, one of the best budget-saving features of the Thermomix is being able to make our own homemade yoghurt.... and this vanilla bean flavoured recipe is by far our favourite!
How To Make Yoghurt In The Thermomix
Step 1: Place all ingredients into the Thermomix bowl and mix for 12 minutes, 37 degrees, Speed 3
Step 2: Fill a ThermoServer with boiling water and set aside. When the yoghurt has finished mixing, pour the water out of the ThermoServer and dry it completely (it will now be warm).
Step 3: Pour the yoghurt into the ThermoServer, cover with the lid and then wrap in a towel or blanket to keep warm.
Step 4: Leave for 12 hours (without opening the lid) in a warm room. Then place into the fridge for at least 3 hours before using.
Tips For Making Yoghurt In The Thermomix
Use Full Cream Milk
This results in a thicker yoghurt than skim milk.
Milk Powder
Milk powder helps to thicken the yoghurt.
Use A High Quality Pot Set Yoghurt As The Starter
We recommend using a high quality pot set yoghurt (like Jalna) as it needs to have active cultures. Once you've made you first batch of yoghurt, you can reserve 100g to use as the starter for the next batch.
Varying The Amount Of Sugar
In this recipe we use 40g caster sugar. You can reduce this amount if you prefer a less sweet yoghurt. You can also increase it if you prefer a sweeter yoghurt. It might take a few batches to work out the amount of sugar you like.
Keep The Yoghurt Warm For 12 Hours
In order for your yoghurt to be thick and creamy, it needs to be kept warm for 12 hours. I recommend warming a ThermoServer with boiling water, then pouring out the water and drying it thoroughly before pouring in the yoghurt. I like to then wrap my ThermoServer in a large blanket and place it into a warm room (I use the laundry). The longer the yoghurt is left out of the fridge, the more acidic it will taste. I find that 12 hours is perfect (if you live in a hot climate, 8-10 hours is probably sufficient).
Store In An Airtight Container In The Fridge
The yoghurt will continue to thicken up to 24 hours after it's refrigerated.

I made this yoghurt the other day and it turned out perfectly! Thick, creamy consistency but after a day or 2 it turned quite slimey. Still tastes good but no longer thick and creamy. How do I get it to stay thick and creamy for longer..?

I made this today , it was a very hot day and humid day (feels like temp 40c) here in QLD, Australia, so preheated thermo-server, filled with delicious creaminess was wrapped in a towel and put in the (non air conditioned) garage… and left for 10 hours, As a 1st time yoghurt maker I was unsure what to expect, after lifting the lid after it had been in the fridge for 3 hours, I was amazed to find a yoghurt that was set to perfection! The spoon cuts it, It tastes great… maybe a Little acidic so an 8 hour fermentation time may have done the trick (esp in todays heat) but I’m not changing a thing! It is sooo awesome, was sooo easy and I am now going to make my own alll the time.
I used zymil full cream lactose free, long life milk and regular milk powder with jalna pot set Greek yoghurt!

Just wondering if this would work using Synchie pouches? If so, when to put yoghurt into the pouch, before or after the 12 hour sit time?

I haven't tried this but I would suggest you'd put the yoghurt in the pouches after the 12 hour time and before you chill in the fridge, because I don't think it will set with the yoghurt not being in contact with the warm metal of the Thermoserver. If you give it a go, please let us know how it turned out!

Notion good. It was very thin. I've tried a 2nd batch which seems better but its quite goopy.. I'm thinking that's because I used fresh milk so from the fridge..
maybe it didn't heat to temp. It tastes fine up the texture is off.. I'll do a 3rd with long life because my kids inhale yoghurt and if that doesn't work I'm done!

How did it go Hayley? I also find if I do a vinegar wash of my Thermie right before I make yoghurt I know its super clean plus I use this water to heat my Thermoserver and it is then clean too. I've had batches turn out a little runny I suspect because my Thermie wasn't 100% spotless. When it is though this recipe is the bomb!

I'd love to try this for my one-year old - can I substitute sugar with rapadura sugar or rice malt syrup? Will this affect the outcome?

Hi Janelle, hmm good question! I haven't personally tried vanilla extract in this recipe but I can't imagine that it would have too much of an effect on the result.

I have just made the yogurt and mine didn't set either! I wrapped in towel, in warmed server, and sat on table for 12 hours. Maybe not warm enough though?? Suggestions for how to keep warm as I'd like to try again?

It can be tricky to keep the yoghurt warm enough to allow it to set during the cooler months!
Here's a few tips:
- make sure you're going a really good quality thermos
- heat the thermos with boiling water then pour out and dry just before putting the yoghurt in (this helps it stay warm)
- wrap the thermos in a blanket and store in a warm spot (I place mine wrapped in a blanket in the laundry under the ducted heating vent)
- use a really good quality starter

Hi Rebekah, unfortunately there's not really anything you can do now if it's runny. Have a read through the tips in our post and see if there's anything you could do differently to help it set better next time (I'd suggest that maybe the temperature could have been too cool for it set during the 12 hours).

Hi. Can you tell me why I get a yeasty sort of smell a few days after I make the yoghurt? I’ve tried putting yoghurt in different containers but it makes no difference. It still tastes fine but the odour is off putting.
