Step 1 - Crush The Watermelon
Place the chunks of watermelon into the Thermomix bowl.
Mix until smooth and combined.
Step 2 - Mix
Add the vodka and lemon juice and mix to combine.
Step 3 - Strain (optional step)
You can pour the watermelon mixture straight into the serving glasses or you can strain it into a jug first (my preferred option).
Step 4 - Serve
Divide the watermelon liquid between the glasses (the more you add, the stronger your cocktails will be).
Fill to the top with lemonade, garnish with fresh mint and serve immediately.
Expert Tips
- for a low calorie option, use sugar-free lemonade
- fresh mint is optional (but recommended) as a garnish
- if you prefer (I do!), strain the watermelon liquid through a sieve and into a jug before diving between the glasses. This removes the watermelon puree.
- This recipe can be doubled as long as it doesn't exceed the MAX line in your Thermomix.
- to make your cocktails stronger, add more of the watermelon liquid to the glasses and less lemonade. For weaker cocktails, add less watermelon liquid and more lemonade.
FAQs
