    Thermomix Mint & Cucumber Raita Dip

    Our Thermomix Mint & Cucumber Raita Dip is fast, fresh and packed full of flavour! Serve it with homemade roti bread and your favourite curry or meat dish.

    I'm sure by now you guys know how much I love a quick, easy and delicious recipe... and this Thermomix Mint & Cucumber Raita Dip ticks those boxes!

    It's the perfect dip to serve on it's own with fresh homemade roti bread, great for wraps and sandwiches, on an antipasto platter, or served with meats or curries.

    It really is one very versatile dip!

    • Quick & Easy - It takes just 10 minutes to prepare our Thermomix raita... then allow it to chill, thicken and the flavours combine.

    What You Need

    Just 5 basic ingredients are needed to make mint and cucumber raita!

    • Mint - use fresh mint (not dried)
    • Cucumber - use Lebanese or continental cucumbers. It's important to remove the seeds and any liquid from the cucumbers before using (so that your dip isn't runny).
    • Yoghurt - choose a thick, good quality natural or greek yoghurt.
    • Cumin - use ground cumin (available from the spices aisle of the supermarket).
    • Lemon Juice - freshly squeezed lemon juice is best. However, store-bought bottled lemon juice can also be used.

    Step By Step Instructions

    It's SO simple to make raita dip in your Thermomix!

    Step 1 - Chop The Mint

    Place the mint into the Thermomix bowl and chop finely.

    TIP: Scrape the bowl down a few times in between mixing.

    Step 2 - Prepare The Cucumber

    Cut the cucumber into 6 pieces and scrape out the seeds (and discard).

    Use a paper towel to dry the cucumber.

    Add the cucumber to the mint in the Thermomix.

    Roughly chop.

    Strain out any excess liquid.

    Step 3 - Mix

    Add the yoghurt, cumin and lemon juice to the Thermomix bowl.

    Season with salt and pepper to taste.

    Mix until combined.

    Step 4 - Chill

    Pour the Thermomix raita dip into a bowl or container and chill in the fridge for 2 hours.

    TIP: the chilling time allows the flavours to develop and the dip to thicken.

    Expert Tips

    • remove all of the seeds from the cucumber. Dry the cucumber pieces with a paper towel to remove any excess liquid.
    • for best results use a good quality thick greek or natural yoghurt
    • chill the dip for 2 hours in the fridge - this allows the flavours to develop and the dip to thicken
    • serve with homemade roti bread and curry
    • store in an airtight container in the fridge for up to 1 week
    • freeze in ziplock bags (with the air removed) for up to 1 month. Allow to defrost in the fridge before consuming.

    • Thermomix

    Ingredients

    • 5 g fresh mint
    • 350 g cucumber approx 1 large
    • 425 g greek or natural yoghurt
    • ¾ teaspoon ground cumin
    • 30 g lemon juice approx the juice of 1 lemon
    • Salt and pepper , to season

    Instructions

    • Place the mint leaves into the Thermomix bowl. Chop for 5 seconds, Speed 8. Scrape down the sides and repeat until roughly chopped.
    • Cut the cucumber into 6 pieces and scrape out the seeds (discard). Use a paper towl to dry the cucumber.
    • Place the dried cucumber pieces into the Thermomix bowl and press Turbo for 2-3 seconds or until roughly chopped. Scrape down the sides of the bowl. Remove any excess liquid.
    • Add the yoghurt, cumin, lemon juice, salt and pepper. Mix for 10 seconds, Speed 3, or until combined.
    • Pour into a bowl and place into the fridge for 2 hours.
    • Serve with roti bread or curry.
