Our Thermomix Corn & Zucchini Fritters are a delicious savoury option for breakfast, lunch or dinner!
These are always popular with kids (even fussy toddlers!) and adults alike.
They can be served as a simple snack on their own or made into a complete meal with your choice of poached eggs and bacon (or smoked salmon), a salad, or simply sour cream and sweet chilli sauce on top.

What You Need
There's no need to make an extra trip to the supermarket because our Thermomix Corn & Zucchini Fritters are made entirely from pantry staples!

- Zucchini - after grating the zucchini make sure you squeeze ALL of the liquid out with paper towel... and also wash and dry the Thermomix.
- Cheeses - I like to use a combination of cheddar/tasty cheese and parmesan cheese for the ultimate flavour.
- Egg - this helps to bind the mixture together.
- Corn - use a tin of corn kernals and drain them thoroughly before using.
- Self Raising Flour - also known as self rising flour. If you don't have self raising flour, you can make your own using plain flour and baking powder.
- Baking Powder - this also acts as a rising agent in the fritters - keeping them fluffy and soft!
- Onion & Garlic Powders - for extra flavour.
Step By Step Instructions
You won't believe how easy it is to make Corn & Zucchini Fritters in your Thermomix!

Step 1 - Prepare The Zucchini
Place the zucchini (roughly chopped) into the Thermomix bowl.
Mix until finely grated.

Place the grated zucchini onto paper towel and squeeze out any excess liquid.
Set aside.
Wash and dry the Thermomix bowl.

Step - Make The Fritter Batter
Place the cheeses into the Thermomix bowl and mix until grated.

Add the reserved zucchini and all of the remaining ingredients.

Mix on REVERSE to combine (scraping down the sides of the bowl partway through).

Step 3 - Cook The Fritters
Heat 1 tbs of oil in a large frying pan.
Add tablespoons of the mixture and spread out.
Cook for 2-3 minutes or until bubbles start forming on top and then base is golden.
Flip over and cook on the other side.
Repeat with the remaining fritters.

Expert Tips
- It's important to squeeze ALL of the liquid out of the grated zucchini... otherwise you'll have soggy fritters!
- You can increase the amount of zucchini used up to 400g if you like.
- This recipe can be doubled.
- This recipe makes 8 large fritters or 12 small fritters.
- Serve with your choice of toppings: sour cream and sweet chilli sauce, chutney, poached eggs and bacon etc.
- Add extra oil to the frying pan between each batch.
- If you have more than one frying pan, save time by using multiple pans at once.
- Keep fritters warm in a low oven while you cook the remaining batches.
- Store in an airtight container in the fridge for up to 5 days.
- Freeze leftover fritters for up to 3 months.

Thermomix Corn & Zucchini Fritters
Equipment
- Thermomix
- Frying Pan
- Stove-top
Ingredients
- 200 g zucchini roughly chopped
- 60 g cheddar cheese or tasty
- 40 g parmesan cheese
- 1 egg
- 420 g can corn kernels drained
- 75 g self raising flour
- 1 teaspoon baking powder
- ½ teaspoon onion powder optional
- ½ teaspoon garlic powder optional
- salt and pepper to season
Instructions
- Place the zucchini into the Thermomix bowl and chop for 1 second using the Turbo function. Place the grated zucchini onto a paper towel lined plate and squeeze until all of the moisture has been removed.
- Place the cheddar and parmesan cheeses into a clean and dry Thermomix bowl. Grate for 5 seconds, Speed 8.
- Add the grated zucchini, egg, corn kernels, self raising flour, baking powder, onion powder, garlic powder and salt and pepper. Mix for 5 seconds, REVERSE, Speed 4. Scrape down the sides of the bowl and mix for a further 5 seconds, REVERSE, Speed 4.
- Heat 1 tbs of oil in a large frying pan over medium heat.
- Place heaped tablespoons of the mixture into the frying pan and spread out using the back of a spoon.
- Cook for 2-3 minutes or until golden on the bottom and bubbles have started to form on the top.
- Carefully flip over and cook for a further 2 minutes or until golden and cooked through.
- Repeat with the remaining mixture.
