    What You Need

    All you need is 5 basic ingredients to make Thermomix Coconut Ice!

    • Icing Sugar - use pure icing sugar (not icing sugar mixture) as it sets firmer.
    • Cream of Tartar - you can buy cream of tartar from the baking aisle of the supermarket (near the baking powder and gelatine).
    • Sweetened Condensed Milk - use full fat (not skim) condensed milk for the best results.
    • Coconut - use dry, fine desiccated coconut (not shredded or moistened).
    • Pink Food Colouring - add more or less depending on how pink you'd like it to be.

    Step By Step Instructions

    It takes just 5 simple steps to make Thermomix Coconut Ice!

    Step 1 - Sift

    Place the icing sugar and the cream of tartar into the Thermomix bowl.

    Mix until well sifted.

    Step 2 - Add The Coconut & Condensed Milk

    Pour the sweetened condensed milk into the Thermomix bowl. Add the desiccated coconut.

    Mix to combine.

    Step 3 - Press The White Layer Into The Tin

    Take half of the mixture and press it firmly into the prepared tin.

    Step 4 - Add The Pink Food Colouring

    Add drops of food colouring (more or less depending on how vibrant you'd like the colour to be).

    Mix until the colour has dispersed.

    Step 5 - Add The Pink Layer

    Press the pink coconut layer on top of the white layer.

    Chill until firm and set.

    Expert Tips

    FAQs

    What's the difference between pure icing sugar and icing sugar mixture?

    Pure icing sugar has nothing added to it while icing sugar mixture has cornflour added. Pure icing sugar sets firmer than icing sugar mixture.

    What is cream of tartar?

    Cream of tartar is a white powder that stabilises and firms ingredients.

    Can I use other colours of food colouring?

    Pink is the traditional colour used in coconut ice, however, you can use any colour you like!

    Equipment

    • Thermomix
    • 20 X 20cm baking tin

    Ingredients

    • 300 grams pure icing sugar
    • ¼ teaspoon cream of tartar
    • 395 grams sweetened condensed milk
    • 300 grams desiccated coconut
    • 5-6 drops pink food colouring

    Instructions

    • Grease and line a small square baking tin (approx 20X20cm) with baking paper and set aside.
    • Place the icing sugar and cream of tartar into the Thermomix bowl and mix for 10 seconds, Speed 9.
    • Add the coconut and sweetened condensed milk to the bowl and mix for 10 seconds, Speed 4. Scrape down the sides of the bowl and repeat for a further 5 seconds.
    • Press half of the mixture firmly into the prepared tray.
    • Add the food colouring to the Thermomix bowl and mix for 10 seconds, Speed 4 - use the spatula to help mix the food colouring completely through the mixture.
    • Press the pink mixture on top of the white layer and place into the fridge to set.
