- Chicken - I prefer to use chicken breast, however you can also use chicken thighs.
- Breadcrumbs, either plain or panko breadcrumbs can be used.
- Eggs - you will need 2 x 70 gram eggs for this recipe.
- Parmesan Cheese - either grate you own or use store bought cheese.
- Dried Mixed Herbs
- Salt and Pepper.
How to Make Chicken Tenders

Step 1. Grate the cheese. Add the breadcrumbs, mixed herbs and salt and pepper. Mix to combine.
Step 2. Transfer to a bowl.
Step 3. Lightly beat the eggs and place into a bowl.
Step 4. Dip the chicken strips into the egg before coating in the breadcrumb mixture. Place onto a baking tray.
Step 5. Repeat until all the chicken strips are coated. Bake until golden.
Recipes Hints and Tips
This recipe works best with chicken breast, however chicken thighs can also be used.
Prepare the breadcrumb mixture up to two days in advance, store in an airtight container in the fridge until required.
Baking time may vary depending on the size of the chicken strips.
This recipe can be doubled.
Freeze the breadcrumb mixture for up to three months.
These chicken tenders can be frozen for up to two months either cooked or uncooked. Store in a freezer safe container.

Thermomix Chicken Tenders
Equipment
- Thermomix
- Oven
- 1 x Baking Tray
Ingredients
- 500 grams chicken breast
- 1 cup bread crumbs approximately three slices of day old bread
- 100 grams parmesan cheese finely grated
- 2 teaspoons mixed herbs
- salt and pepper
- 2 eggs
Instructions
- Preheat your oven to 190 degrees celsius (fan-forced) and line a tray with baking paper.
- Slice the chicken breast into strips and place in the fridge until needed.
- Lightly beat the eggs and place them into a bowl - set aside until needed.
- Place the Parmesan Cheese into your Thermomix bowl and mix for 10 seconds on speed 9.
- Add the bread crumbs, mixed herbs and sesame seeds along with a sprinkle of salt and pepper and mix for 10 seconds on speed 5 or until combined.
- Pour the mixture into a separate bowl and coat the chicken strips in the egg before transferring to the bowl with the bread crumb mixture and turn to coat.
- Place the coated chicken strips onto your baking tray and cook for 25 minute or until golden and cooked through.
