How to Make Cheese Sauce in a Thermomix

Recipes really don’t get much easier than this Thermomix Cheese Sauce.  This Cheese Sauce recipe seriously takes less than 10 minutes to put together and can be used in so many ways. We love to serve it drizzled over steam veggies or silverside and it’s also a great sauce to top your favourite pasta bake or lasagna with.

To give this Cheese Sauce a little extra kick, I like to use a combination of tasty and parmesan cheese, but you can really use whatever cheese you have in the fridge.  You can learn how to make Cheese Sauce in your Thermomix here:

  • 300 grams spiral pasta

Meat Filling

  • 2 cloves garlic
  • 1 brown onion cut in half
  • 1 zucchini cut into 3cm pieces
  • 1 carrot cut into 3 cm pieces
  • 50 grams sweet potato peeled and cubed
  • 4 slices short cut bacon
  • 800 grams crushed tomatoes
  • 1 tbsp mixed herbs
  • 100 grams water
  • 50 grams tomato paste
  • 500 grams beef mince

Cheese Sauce

  • 30 g tablespoons of butter
  • 15 g (or 2 tablespoons) of plain flour
  • 250 g of milk
  • 100 g of grated tasty cheese
  • 25 g of grated parmesan cheese
  • Salt and pepper to taste
  • 1/2 tsp of nutmeg


  1. Place the garlic, short cut bacon and brown onion into your Thermomix bowl. Blitz for 4 sec, sp 5.

  2. Add the olive oil and cook for 3 mins, varoma temp, sp2.

  3. Add the zucchini, carrot and sweet potato and blitz for 4 sec, sp 5. Blitz for longer if you want it finer.

  4. Add the crushed tomatoes, mixed herbs, water and tomato paste and cook for 5 minutes, varoma temp, speed 2.

  5. Place the beef mince into the steaming basket and break up with your spatula. Gently and carefully pop it into the TM bowl and cook for 8 mins, varoma temp, sp 3 REVERSE. At the 8 min mark, gently stir mince and cook for another 4 mins (or longer until it's cooked through) on varoma temp, sp 3 Reverse.

  6. Carefully remove the basket from the TM bowl and place into your Thermoserver. Add the sauce and stir to combine. Set aside until needed.

  7. Pre-heat your oven to 190 degrees.

  8. Before you make the cheese sauce, place the pasta into a large pot of boiling water and cook as per the packet instructions. Drain and then place into a large casserole dish. 

  9. To make the cheese sauce, place 2cm cubes pieces of the tasty and parmesan cheese into your Thermomix bowl and blitz for 10 seconds on speed 10 or until finely grated.

  10. Add the butter, plain flour, milk, nutmeg and salt and pepper to your Thermomix bowl and cook for 7 minutes at 80 degrees on speed 4.
  11. Pour the meat sauce over the pasta and stir to combine. Pour the cheese sauce over the top and bake for 30 minutes.

Another tip is to make sure you use white pepper when making this Cheese Sauce if you don’t want little black pepper flecks in your sauce.

  1. Can this recipe be made ahead to save time at a dinner party? I note it says to serve immediately. I have an old recipe which includes blue cheese and white wine. Thank you.

      I always try and serve it immediately as it can develop a ‘skin’ if you let it sit out. You could certainly try making it in advance, however I think it would need a good mix prior to serving.

  2. LOVED this cheese sauce!!! My husband put 45g of Parmesan cause he misread the recipe and it was awesome 😉 must make sure he makes that ‘mistake’ again!

  3. Googled Cheese sauce and found this recipe. It looked terrific and easy. I halved the ingredients. Left out Tasty cheese and added 1 TBS of dijon Mustard , didnt have Plain flour so used Corn Flour. It said use immediately, but I couldnt, so added a tad more milk and temp about 60 degrees for a couple of minutes OMG it was awesome. Partner must have complimented me 1 dozen times. Thanks for the receipe even though I changed it a bit. 🙂

  4. I have made the cheese sauce so many times I can’t remember I also add chicken stock omg so good on cauliflower!!!
