Our Thermomix Sticky Date Pudding recipe can be ready to enjoy in under one hour! Topped with a homemade caramel sauce, this classic pudding is just like the one you grew up with and you won't be able to resist going back for seconds!
I grew up eating this pudding and this Thermomix version is based on the recipe my Nan used to make when we were kids. While you can also make this Sticky Date Pudding in individual containers, I think there is something special about putting this pudding down in the centre of the table and letting everyone help themselves to a nice big piece!

- Water
- Pitted Dates
- Vanilla Extract – vanilla essence can also be used
- Bicarbonate of Soda – also known as bicarb soda
- Butter – I use unsalted butter for this recipe
- Eggs - 70 gram eggs are used in this recipe.
- Caster Sugar
- Brown Sugar – I use regular brown sugar
- Self-raising flour
- Cinnamon
To make the Caramel Sauce to top your pudding, you will need:
- Brown Sugar – I use regular brown sugar
- Butter – I also use unsalted butter.
- Thickened Cream – please do not substitute with ‘pouring’ or light cream as the consistency will not be the same.
- Vanilla Extract – vanilla essence can also be used.
How to make a Sticky Date Pudding in a Thermomix
Step 1. Boil the water and add the date. Let the mixture sit for 5 minutes.
Step 2. Add the vanilla extract and bicarb soda and mix to combine.
Step 3. Add the butter and sugars and mix to combine.
Step 4. Add the eggs, self-raising flour and cinnamon and mix to combine.
Step 5. Transfer mixture to a baking dish and bake until golden and cooked through.
Step 6. To make the caramel sauce, combine the ingredients and cook until golden and slightly thickened.
Step 7. Pour the caramel sauce over the pudding just before serving.
Expert Tips
- When making the pudding, either dark or regular brown sugar can be used.
- A 22cm square baking dish was used to prepare this recipe, if using a smaller or larger baking dish, the cooking time will be different.
- Thickened cream is required to make the caramel sauce, don’t use pouring or light cream.
- I like to prepare the caramel sauce when the pudding goes into the oven. This allows the sauce time to thicken. Alternatively, you can make the sauce when there is approximately 15 minutes of cooking time remaining.
- This Pudding is best served while it is still warm.
- Top your Sticky Date Pudding with ice-cream, cream or custard.
You can use either pitted dates or medjool dates for this recipe.
Sticky Date Pudding is a very sweet dessert. To reduce the sweetness, don't use all of the caramel sauce.
Yes, you can freeze Sticky Date Pudding. We do not recommend freezing the Caramel Sauce however as it does not defrost well. To freeze, place the plain pudding in a freezer safe container and store for up to two months.

Thermomix Sticky Date Pudding
Equipment
- 1 x 22cm square baking dish 2 litre capacity
- Thermomix
Ingredients
- 220 grams pitted dates
- 1 teaspoon vanilla extract
- ¾ teaspoon bicarbonate of soda
- 200 grams water
- 90 grams butter softened
- 100 grams caster sugar
- 50 grams brown sugar for the pudding
- 2 eggs
- 180 grams self raising flour
- 1 teaspoon cinnamon
Caramel Sauce
- 140 grams butter
- 120 grams thickened cream
- 1 teaspoon vanilla extract
- 150 grams brown sugar
Instructions
- Pre-heat your oven to 180 degrees celsius (fan-forced) and lightly grease a 2 litre capacity, 22cm square baking dish.
- Add the water to your Thermomix bowl. Heat for 3 minutes, Varoma temperature, speed 1 or until the temperature reaches 100 degrees.
- Add the pitted dates and let the mixture stand for 5 minutes.
- Add the vanilla extract and bicarbonate of soda and mix for 10 seconds, speed 4 to combine.
- Add the butter, caster sugar and brown sugar to the bowl and mix for 10 seconds, Speed 5.
- Add the eggs, self raising flour and cinnamon and mix for 5 seconds, Speed 4. Scrape down the sides of the bowl and mix for a further 5 seconds, Speed 4. If mixture has not yet combined, mix for a further 5 seconds, speed 4.
- Pour the mixture into the prepared baking dish. Place into the oven and bake for 35 - 40 minutes or until golden and cooked through when tested with a skewer.
- In a clean Thermomix bowl, add the caramel sauce ingredients and cook for 8 minutes, Varoma temperature, Speed 2.
- Pour the caramel sauce over the hot Pudding and serve immediately.
