    Our buttery, melt-in-your-mouth Thermomix Cranberry Shortbread is made using just 4 basic ingredients - butter, icing sugar, plain flour and dried cranberries!

    What You Need

    To make our Thermomix Cranberry Shortbread, you will need JUST 4 INGREDIENTS!!!

    • Icing Sugar - you can use either icing sugar mixture or pure icing sugar for this recipe.
    • Butter - salted or unsalted butter can be used. Ensure it is chilled when using.
    • Plain Flour - also known as all purpose flour.
    • Dried Cranberries - also known as Craisins.

    Step By Step Instructions

    It's so simple to make buttery, melt-in-your mouth Thermomix Cranberry Shortbread!

    Step 1 - Sift The Icing Sugar

    Place the icing sugar into the Thermomix bowl and mix to sift.

    Step 2 - Make Crumbs

    Add the butter and flour and mix until the ingredients resemble breadcrumbs.

    Step 3 - Add The Cranberries & Knead

    Add the dried cranberries and use the Intreval/Kneading/Dough function on your machine to knead the dough.

    Note: some of the cranberries will get finely chopped at this stage - that's completely fine. You'll end up with a few larger chunks remaining too.

    Step 4 - Chill

    Form the dough into a ball. Wrap in plastic wrap and chill in the fridge.

    Step 5 - Roll & Bake

    Roll the dough out on a lightly floured board.

    Use your choice of cookie/scone cutters to cut the shortbread into shapes.

    Bake in the oven for 12 minutes or until just lightly golden (do NOT overcook!).

    Allow to cool for a few minutes on the trays before transferring to a wire rack to cool completely.

    Follow my top tips for the perfect Thermomix Cranberry Shortbread!

    • use cold chopped butter straight from the fridge
    • you can use pure icing sugar or icing sugar mixture
    • dried cranberries are also called craisins
    • ensure that you chill the dough for 30 minutes before rolling out and baking. This allows the butter to resolidify and helps the shortbread to hold it's shape when baked.
    • you can cut the shortbread into any shapes you like
    • try adding finely grated orange zest or chopped pistachios for a yummy twist
    • store the Thermomix cranberry shortbread in an airtight container at room temperature for up to 1 week.
    • alternatively, you can freeze the unbaked dough or the baked cookies for up to 1 month.

    FAQs

    Help! The Thermomix chopped some of my cranberries up while it was kneading!

    That's completely fine. In fact, this gives the shortbread a delicious cranberry flavour and colour, while still retaining pops of chunky cranberries throughout.

    Should I use icing sugar mixture or pure icing sugar?

    You can use either icing sugar mixture or pure icing sugar when making Thermomix Cranberry Shortbread.

    What are some yummy variations?

    Try adding finely grated lemon zest or even some chopped pistachios! Alternatively, you can omit the cranberries for plain shortbread.

    Equipment

    • Thermomix
    • Oven

    Ingredients

    • 130 g icing sugar
    • 340 g butter
    • 375 g plain flour
    • 150 g dried cranberries

    Instructions

    • Place the icing sugar into the Thermomix bowl and sift for 10 seconds, Speed 6.
    • Add the chopped butter and plain flour and mix for 10 seconds.
    • Add the dried cranberries.
    • Knead the dough for 1 minute using the kneading/Interval/dough function.
    • Shape the dough into a ball, wrap in plastic wrap and chill in the fridge for 30 minutes.
    • Preheat the oven to 160 degrees celsius (fan forced). Line 2-3 flat baking trays with baking paper and set aside.
    • On a lightly floured board, roll the dough out to .5-1cm thick.
      Cut into shapes and place onto the prepared trays.
    • Cook for 12 minutes or until just lightly golden.
    • Allow to cool on the trays for a few minutes before transferring to a wire rack to cool completely.
