- White Chocolate - choose a good quality white chocolate (such as Cadbury, Hersheys, Lindt or Nestle).
- Pistachios - or substitute for macadamias or peanuts. Alternatively you can omit the nuts entirely for a nut-free rocky road.
- Dried Cranberries - also known as Craisins. These can be found in the dried fruits section of the supermarket.
- Marshmallows - use regular sized marshmallows (like Pascalls brand). Chop the marshmallows in half before adding to the rocky road.

Step 1 - Melt The Chocolate
Place the white chocolate into the Thermomix bowl and melt for 4 minutes (or until melted).
Step 2 - Add The Flavourings
Add the pistachios, marshmallows and dried cranberries.
Mix on REVERSE until combined.
Step 3 - Refrigerate
Pour the mixture into the prepared tin and spread out slightly.
Chill in the fridge for 2 hours or until set.

- Use a good quality white chocolate as it is the main ingredient. I recommend Cadbury, Lindt, Hersheys or Nestle.
- For the ultimate ease, use scissors to cut the marshmallows in half.
- Substitute the pistachios for macadamias or peanuts if you prefer.
- Dried cranberries are also known as craisins.
- The nuts can be omitted for a nut-free version.
- Grease and line the baking tin before starting. This will allow you to quickly pour the rocky road mixture into the tin before it sets.
- Once you've added the add-ins, ensure you use the REVERSE function. This will stir rather than chop the ingredients.
- Allow the rocky road to come to room temp before cutting.
- Store rocky road in an airtight container in the fridge for 2 weeks or freeze for up to 3 months.

Thermomix White Chocolate Rocky Road
Equipment
- Thermomix
- 18 x 28cm slice tin
Ingredients
- 500 g white chocolate
- 100 g marshmallows chopped in half
- 100 g dried cranberries
- 80 g pistachios
Instructions
- Grease and line an 18cm X 28cm slice tin with baking paper and set aside.
- Place the white chocolate into the Thermomix bowl. Melt for 4 minutes, 50 degrees, Speed 2 (or until melted).
- Add the chopped marshmallows, dried cranberries and pistachios and mix for 10 seconds, Reverse, Speed 2.
- Spread the mixture into the prepared tin and chill for 2 hours in the fridge.
- Allow the rocky road to come to room temperature before cutting into pieces.
Notes
- Use a good quality white chocolate as it is the main ingredient. I recommend Cadbury, Lindt, Hersheys or Nestle.
- Add 20g coconut oil to the chocolate when melting. This is optional but helps to stop the chocolate from cracking when cut.
