What You Need
Our Thermomix Apple & Cinnamon Scrolls are made using just a few pantry staples.

- Butter - you can use either salted or unsalted butter in this recipe
- Self Raising Flour - use store-bought or make your own using this recipe
- Milk - full cream (whole) milk is best. However, you can use skim/light milk if you prefer
- Butter - extra butter for the cinnamon sugar butter
- Brown Sugar - this gives the butter a lovely caramel flavour and matches perfectly with the cinnamon
- Cinnamon - use ground cinnamon
- Apple - use any variety of apple you like. I generally use Granny Smith as the chunks hold their shape when baked.
- Icing Sugar - for the glaze. Use pure icing sugar (not icing sugar mixture) as it sets firmer.
Step By Step Instructions
It's so easy to make Thermomix Apple & Cinnamon Scrolls!

Step 1 - Mix The Butter & Self Raising Flour
Place the chilled butter and the self raising flour into the Thermomix bowl. Mix to combine until it resembles breadcrumbs.
TIP: Scrape down the sides of the bowl with the spatula partway through mixing.

Step 2 - Knead
With the Interval/Kneading function on, slowly add the milk through the MC (measuring cup) hole.
Knead until it comes together and resembles a dough.

Step 3 - Roll Out The Dough
Roll the dough out on a lightly floured board to 5mm thick.
Step 4 - Make The Cinnamon Butter
Place the butter, cinnamon and sugar into the Thermomix bowl.
Mix until combined.

Spread the cinnamon butter over the dough.

Step 5 - Add The Apple
Sprinkle over the chopped apple.

Step 6 - Roll The Dough & Cut Into Pieces
Roll the dough up into a long tube.

Cut the dough into 8-10 pieces.

Step 7 - Bake
Place the scrolls (cut-side up) into a round cake tin (or onto a baking tray).

Bake for 15 minutes or until golden.
Allow to cool slightly.
Step 8 - Drizzle With Glaze
In a clean and dry Thermomix bowl, mix the icing sugar and hot water together.
Drizzle the glaze over the buns.

FAQs
No! Because we use self-raising flour, there's no need for yeast.
Any variety of apple is fine to use. However, I do recommend choosing a variety that stays slightly firm when baked (such as Granny Smith).
Yes you can! Cinnamon scrolls are delicious on their own! You can also substitute the apple for blueberries or raspberries if you prefer.

Thermomix Apple & Cinnamon Scrolls
Equipment
- Thermomix
- Oven
Ingredients
- 90 g butter cold and chopped
- 300 g self-raising flour
- 150 g milk full cream is best
- 70 g butter room temperature
- 50 g brown sugar
- 3 teaspoon cinnamon
- 1 apple peeled, cored and cut into very small chunks
- 150 g icing sugar
- 3 tbs (approx) hot water
Instructions
- Preheat oven to 210 degrees celsius (fan-forced).
- Lightly grease a 20cm round cake tin and set aside.
- Place the cold butter and self-raising flour into the Thermomix bowl.Mix for 10 seconds, Speed 5. Scrape down the sides of the bowl and repeat 2 more times.
- Knead for 1 minute, Kneading Function, whilst pouring in the milk through the measuring cup (MC) hole.
- On a lightly floured kitchen bench or Thermomat, roll the dough out into a 5mm thick rectangle.
- Place the room temperature butter, brown sugar and cinnamon into the Thermomix bowl.Mix for 20 seconds, Speed 4. Scrape down the sides of the bowl and repeat.
- Spread the cinnamon butter mixture onto the dough.Sprinkle over the chopped apple.
- Roll the dough up into a tube (lengthways).Use a sharp knife to cut the roll into 8-10 pieces.
- Place the pieces cut side up into the prepared cake tin (allow the rolls to touch one another as this will help them to rise).Bake for 15 minutes or until golden brown.
- Allow to cool slightly in the tin.
- Place the icing sugar and 2 tbs hot water into the Thermomix bowl.Mix for 10 seconds, Speed 6 . Scrape down the bowl and repeat 2 more times.
- If the mixture is slightly runny, use a spoon to drizzle it over the buns.If the mixture is still too thick, add another tablespoon of hot water and mix for a further 10 seconds.

Hi Rachel, I would cook them the day before. Allow them to cool completely then store in an airtight container at room temp. On the day, warm them up in a low oven and then drizzle the icing over.
