Recipe Hints and Tips
We used a patty pan baking dish for this recipe. This will result in approximately 24 mini jam tarts. You can use a cupcake tray or individual tart tins, however the baking times and quantity will differ.
Any type of jam can be used for this recipe. We also like to fill these tarts with our Thermomix Lemon Curd.
For best results, use chilled butter.
The dough can be made ahead of time, however it is important to allow it to soften slightly before rolling out.
Store cooked jam tarts in an airtight container at room temperature and consume within five days.

Frequently Asked Questions
If the cooking temperature is too low during baking, the tarts will shrink.
It is important to not overfill the tart shells with jam before baking. For best results, leave a 2-3mm gap between the top of the jam and the pastry.
