    Our simple and zesty Thermomix Lemon Sorbet recipe is made using lemon juice, caster sugar, egg white and water!

    You won't believe how easy it is to make delicious lemon sorbet at home... with the help of your Thermomix!

    Just like your favourite ice-cream shop gelato - but homemade (and using just a couple of basic ingredients).

    What makes our Thermomix Lemon Sorbet so good?

    We use a higher ratio of lemon juice to water than other recipes, giving our lemon sorbet the zestiest, most flavoursome lemon taste.

    Serve it on it's own or on top of your favourite dessert - we promise that the kids (big and little) are going to LOVE it!

    What You Need

    Our Thermomix Lemon Sorbet is made using just a couple of basic ingredients!

    • lemon juice - our recipe calls for a lot of lemon juice... so it's the perfect time to find a friend with an overflowing lemon tree!
    • caster sugar - also known as superfine sugar
    • egg white
    • water

    Step By Step Instructions

    Let's make lemon sorbet in the Thermomix!

    Step 1 - Heat

    Place the water and caster sugar into the Thermomix bowl and mix until the sugar has dissolved.

    Step 2 - Add The Lemon Juice

    Add the lemon juice to the sugar mixture and mix to combine.

    Step 3 - Add The Egg White

    Mix the egg white through the lemon mixture.

    Step 4 - Freeze

    Pour the lemon liquid into a large container or two smaller containers and freeze overnight.

    Step 5 - Mix The Sorbet

    Use a knife to cut the frozen lemon liquid into chunks.
    Place them into the Thermomix.

    Mix until smooth.

    Serve immediately.

    Expert Tips

    Our top tips will ensure perfect lemon sorbet everytime!

    • use freshly squeezed lemon juice
    • we use a higher ratio of lemon juice to water than most recipes... giving you the ultimate lemon flavour
    • the lemon liquid needs to be frozen overnight before being made into sorbet
    • cut large chunks and place them into the Thermomix. Use the spatula through the MC hole to help push the chunks down.
    • serve immediately as the sorbet will begin to melt
    • place any leftover sorbet into a container and freeze for up to 1 month. When you're ready to use it, allow it so sit at room temp for a couple of minutes to soften enough to be able to scoop.

    FAQs

    Can I double this recipe?

    You can, however, when you go to mix the frozen lemon liquid chunks, you will need to do so in two batches or the blades wont be able to cope!

    Can I make this recipe without a Thermomix?

    Yes - you can prepare the lemon liquid on the stovetop and then mix the frozen chunks using a high powered blender or food processor.

    Equipment

    • Thermomix
    • Freezer

    Ingredients

    • 150 g caster sugar
    • 250 g water
    • 300 g lemon juice approximately 8-10 lemons
    • 1 egg white
    Prevent your screen from going dark

    Instructions

    • Place the caster sugar and water into the Thermomix bowl.
      Heat for 4 minutes, 100 degrees, Speed 2 (or until the sugar has dissolved).
    • Add the lemon juice and mix for 5 seconds, Speed 2.
    • Add the egg white and mix for 5 seconds, Speed 4.
    • Pour the lemon liquid into plastic containers and freeze overnight.
    • To make the sorbet, remove the frozen lemon mixture from the containers and cut into large chunks.
    • Place into a clean and dry Thermomix bowl and mix for 20-30 seconds, Speed 9 (using the spatula through the MC hole to push down the chunks).
      Reduce to Speed 4 and mix for 50 seconds (using the spatula through the MC hole to help mix).
    • Serve immediately
