    Our sweet and simple no-bake cherry coconut balls are so easy to prepare and make a yummy dessert or homemade food gift.

    The ingredients for Thermomix Cherry Coconut Balls.
    • coconut - use fine desiccated coconut
    • sweetened condensed milk - use full fat (not skim) sweetened condensed milk as it sets firmer. I prefer to use Nestle brand, however you can use any brand you like.
    • glace cherries - these sticky red cherries can be found in the dried fruits aisle of the supermarket. They are particularly popular during Christmas!
    • lemon - peel the white part of the lemon zest off and then finely grate it in your Thermomix!

    Step By Step Instructions

    Let's make Thermomix Cherry Coconut Balls in just minutes!

    Step 1 - Finely Grate The Lemon Zest

    Use a vegetable peeler to peel the yellow part off from one lemon.

    Place the peeled lemon zest into the Thermomix bowl.

    Finely grate by mixing, then scraping down the sides of the bowl and mixing again (until you have a very fine zest).

    Step 2 - Add The Cherries

    Place the glace cherries into the bowl with the lemon zest.

    Mix until finely chopped (and the mixture has a paste-like texture).

    Step 3 - Mix

    Add the sweetened condensed milk and the coconut to the Thermomix bowl.

    Mix until well combined.

    Step 4 - Roll Into Balls

    Roll the mixture into heaped teaspoon-sized balls and place into an airtight container in the fridge.

    Expert Tips

    Our Thermomix Cherry Coconut Balls are SO easy to make!

    • To get very finely grated lemon zest, mix the lemon peel, then scrape down the sides of the Thermomix bowl and continue mixing and scraping until the zest is very fine.
    • If you would like your cherry coconut balls to be coloured, simply add 1-2 drops of pink or red food colouring along with the sweetened condensed milk and coconut.
    • use fine desiccated coconut (not shredded or sweetened flakes).
    • full fat sweetened condensed milk should be used (not skim) as it sets firmer.
    • If the mixture is too dry (it should be able to be rolled into balls), add the extra sweetened condensed milk and mix again.
    • Store the cherry coconut balls in an airtight container in the fridge for up to 1 week.
    • Alternatively, freeze the balls for up to 1 month.

    FAQs

    Can I add food colouring to these balls?

    Absolutely!!! Adding 1-2 drops of red or pink food colouring gives these Christmassy balls an extra fun pop of colour!

    Can I make this recipe without a Thermomix?

    Yes! You can use a high powered food processor or blender instead.

    Help! My mixture is too dry to roll into balls!

    No problem! Simply add the remaining sweetened condensed milk and mix again.

    Equipment

    • Thermomix

    Ingredients

    • zest of 1 lemon
    • 200 g glace cherries
    • 340 g desiccated coconut
    • 300-400 g sweetened condensed milk see notes
    • 1-2 drops pink or red food colouring optional
    Prevent your screen from going dark

    Instructions

    • Peel the zest off the lemon using a peeler. Place the zest into the Thermomix bowl. Mix for 10 seconds, Speed 8. Scrape down the sides of the bowl. Repeat 3-4 more times or until the zest is very finely grated.
    • Add the glace cherries and chop using the Turbo function for 1 second.
    • Add the coconut and 300g of the sweetened condensed milk. Mix on REVERSE, Speed 4, using the spatula through the MC hole to help mix until combined.
      If the mixture is too dry (it should be able to be rolled into balls), add the extra sweetened condensed milk and mix again.
    • Roll the mixture into heaped teaspoonful balls and store in an airtight container in the fridge for up to 1 week.

    RECIPE NOTES & TIPS

    • You can add 1-2 drops of red or pink food colouring with the coconut and sweetened condensed milk for coloured coconut balls (they will look like the filling on these balls). 
    • use fine desiccated coconut (not shredded or sweetened flakes).

    • If the mixture is too dry (it should be able to be rolled into balls), add the extra sweetened condensed milk and mix again.
    • Store the cherry coconut balls in an airtight container in the fridge for up to 1 week.
