Thermomix Cherry Coconut Balls

Ingredients

  • zest of 1 lemon
  • 200 g glace cherries
  • 340 g desiccated coconut
  • 300-400 g sweetened condensed milk see notes
  • 1-2 drops pink or red food colouring optional

Instructions

  • Peel the zest off the lemon using a peeler. Place the zest into the Thermomix bowl. Mix for 10 seconds, Speed 8. Scrape down the sides of the bowl. Repeat 3-4 more times or until the zest is very finely grated.
  • Add the glace cherries and chop using the Turbo function for 1 second.
  • Add the coconut and 300g of the sweetened condensed milk. Mix on REVERSE, Speed 4, using the spatula through the MC hole to help mix until combined.
    If the mixture is too dry (it should be able to be rolled into balls), add the extra sweetened condensed milk and mix again.
  • Roll the mixture into heaped teaspoonful balls and store in an airtight container in the fridge for up to 1 week.

Notes

RECIPE NOTES & TIPS
  • To get very finely grated lemon zest, mix the lemon peel, then scrape down the sides of the Thermomix bowl and continue mixing and scraping until the zest is very fine.
  • You can add 1-2 drops of red or pink food colouring with the coconut and sweetened condensed milk for coloured coconut balls (they will look like the filling on these balls). 
  • use fine desiccated coconut (not shredded or sweetened flakes).
  • full fat sweetened condensed milk should be used (not skim) as it sets firmer.
  • If the mixture is too dry (it should be able to be rolled into balls), add the extra sweetened condensed milk and mix again.
  • Store the cherry coconut balls in an airtight container in the fridge for up to 1 week.
  • Alternatively, freeze the balls for up to 1 month.
