Peel the zest off the lemon using a peeler. Place the zest into the Thermomix bowl. Mix for 10 seconds, Speed 8. Scrape down the sides of the bowl. Repeat 3-4 more times or until the zest is very finely grated.
Add the glace cherries and chop using the Turbo function for 1 second.
Add the coconut and 300g of the sweetened condensed milk. Mix on REVERSE, Speed 4, using the spatula through the MC hole to help mix until combined. If the mixture is too dry (it should be able to be rolled into balls), add the extra sweetened condensed milk and mix again.
Roll the mixture into heaped teaspoonful balls and store in an airtight container in the fridge for up to 1 week.

RECIPE NOTES & TIPS
To get very finely grated lemon zest, mix the lemon peel, then scrape down the sides of the Thermomix bowl and continue mixing and scraping until the zest is very fine.
