- Butter - either salted or unsalted can be used.
- Banana - the riper the better!
- Vanilla extract.- vanilla essence can also be used.
- Milk
- Eggs - we use 70 gram eggs.
- Self-raising flour
- Cinnamon
Method
Step 1. Add the butter to the Thermomix bowl and cook until melted.
Step 2. Add the banana, eggs and vanilla extract and mix until well combined.
Step 3. Add the remaining ingredients and mix to combine.
Step 4. Place a little butter into a large frying pan and heat over a medium heat. Add the pancake batter and cook for 1 - 2 minutes or until bubbles begin to appear on the surface. Carefully flip the pancake and cook for a further minute.
Step 5. Repeat until all of the batter has been used.
Tips for Making Banana Pancakes in your Thermomix:
- If the bananas are quite large, you may only need one for this recipe.
- It's important to use bananas that are over-ripe as that is what helps give these pancakes their sweetness.
- Serve with slices of fresh banana, berries and maple syrup.
- You can freeze these cooked pancakes for up to two months.
- Instead of greasing your frying pan with butter, you can also use ghee or coconut oil.

Thermomix Banana Pancakes Recipe
Equipment
- Thermomix
- Frying Pan
Ingredients
- 40 grams butter plus extra for greasing the frying pan
- 150 grams banana (approx 2 medium)
- 1 teaspoon vanilla extract
- 300 grams milk
- 2 eggs
- 200 grams self raising flour
- 1 teaspoon cinnamon
Instructions
- Place the butter into your Thermomix bowl and cook for 2 minutes, 60 degrees, Speed 2 to melt.
- Add the banana and vanilla extract and mix for 10 seconds, speed 6.
- Add the milk, eggs, self raising flour and cinnamon and mix for 10 seconds speed 4.
- Scrape down the sides of the Thermomix bowl and mix for a further 5 seconds, speed 4.
- Preheat a non-stick frying pan on medium heat. Using a ΒΌ measuring cup, pour mixture into pan.
- Cook each pancake for approximately 2 minutes, until they start to bubble, before flipping over and cooking for a further 1 minute.
- Place the cooked pancakes into a Thermoserver to keep warm or onto a plate. Repeat until all of the mixture is used.
