What You Need
Just 3 Ingredients!!!
That's right... just 3 ingredients (plus sprinkles if you want a colourful pop to the slice!).
Note: Please scroll to the recipe card at the bottom of the post for ingredient quantities and the full detailed method.
- Rice Bubbles - also known as Rice Krispies. You can use any brand (or home-brand) puffed rice you like.
- Marshmallows - if you want your Thermomix Rice Bubble Bars to look just like LCM bars, then use only white marshmallows. If you're not fussed with the look, you ca use a combo of white and pink marshmallows. I generally use the Pascall's brand of marshmallows.
- Butter - salted or unsalted is fine to use.
- Optional - sprinkles or 100s and 1000s give the slice a fun, bright pop of colour that the kids love.

Melt until smooth (a few small lumps of marshmallow are ok!).

Note: you will need to insert the Thermomix spatula through the MC hole to help mix.
Step 3 - Chill
Press the mixture VERY firmly into a greased and lined baking tin.
Add sprinkles or 100s and 1000s (optional).
Chill for 2 hours or until set. Use a sharp knife to cut into small pieces.
Expert Tips
- You can use a mixture of pink and white marshmallows if you prefer.
- Use regular sized marshmallows (like Pascalls brand).
- Use a new box of rice bubbles (to avoid stale rice bubbles).
- Insert the Thermomix spatula through the MC hole and stir to to help mix the rice bubbles through the marshmallow mixture.
- Press the mixture VERY firmly into the slice tin. Use the back of a large spoon and press down firmly.
- Store the slice in the fridge for up to 1 week (keeping it in the fridge ensures it stays crunchy!)
- Freeze for up to 3 months.
FAQs
We recommend using a standard sized rectangular slice tin (18 X 28cm). Ensure it is greased and lined with baking paper before adding the mixture.
It's important to insert your Thermomix spatula through the MC hole when the rice bubbles are being mixed through the marshmallow mixture. Use the spatula to help combine while the blades are turning.
Using the REVERSE function will ensure that the rice bubbles are mixed gently rather than crushed!

What was your favourite lunch box treat growing up?
Alison says
Awesome. Kids loved them.
Melissa says
Can these be used in a lunch box.
Lucy says
Hi Melissa, they are best when kept refrigerated as they do tend to crumble when they warm up!
Jasmin says
Not sure if I was doing something wrong but I definitely had to increase the time and speed to mix the marshmallows and butter. In the fridge now and looks great! Thank you!
Lauren Matheson says
Hi Jasmin, thanks for your feedback! Hmm, sometimes if the butter is straight from the fridge it can take a little longer. I hope you enjoy it 🙂
Stavey says
Me too! I had to do the melting process 4 times.
Nicola Clifford says
Love these. First time I used quinoa puffs and kids didn't pick the difference. Used a few extra marshmallows this time to make it stick better (pink and white) and melted for 2 mins. Also find it mixes better if you gradually add the rbs through the hole in the lid while it's mixing, rather than all at once. Kids gobble it up!
Lauren Matheson says
Thanks for the tips Nicola, I'm going to try that next time 🙂 I'm glad the kids love them too xx
Rebecca says
How long do these last for please?
Lauren says
I've kept them for up to a week in an airtight container.
Jussi says
Can these be suitably frozen?
Lauren says
I haven't tried freezing this one before, you could always try freezing a little piece overnight to see how it goes before freezing a big batch 🙂
michelle says
I freeze them all the time. Still delicious!
