However, you can make an entire batch of melting moments in your Thermomix for approximately the cost of ONE cafe bought biscuit.

What You Need

For The Biscuits
- plain flour - also known as all purpose flour
- cornflour - also known as cornstarch. Using cornflour gives the Thermomix Passionfruit Melting Moments that classic crumbly melt-in-your-mouth texture
- butter - salted or unsalted butter can be used
- vanilla extract - or vanilla essence
- icing sugar - I recommend using icing sugar mixture (not pure icing sugar) for the filling as it is softer
For The Passionfruit Icing
- butter - you can use either salted or unsalted butter for this recipe. I recommend using salted butter as it cuts through the sweetness of the icing sugar.
- pure icing sugar - unlike in the biscuits, I recommend pure icing sugar (not icing sugar mixture) for the filling as it sets firm.
- passionfruit pulp - you can use fresh or tinned passionfruit pulp. If using tinned passionfruit pulp, try to get as many seeds as possible while not overdoing the liquid (or your icing will be too runny).
Step By Step Instructions
Follow our simple steps for the perfect Thermomix Passionfruit Melting Moments!

Step 1 - Sift
Place the plain flour and cornflour into the bowl and mix to sift.
Set aside in a seperate bowl.
Step 2 - Mix
Place the butter, icing sugar and vanilla extract into the bowl.
Mix until smooth and creamy.
Add the reserved flour/cornflour and mix until combined and dough like.
Step 3 - Bake
Roll the mixture into balls, lightly press a fork into the top and bake for 10 minutes (do not overcook).
Allow to cool completely before icing.
Step 4 - Make The Passionfruit Icing
Mix the butter and icing sugar in a clean and dry Thermomix bowl.
Add the passionfruit pulp.
Mix on REVERSE to combine.
Step 5 - Assemble The Biscuits
Spread a small amount of icing onto the flat side of one biscuit and sandwich together with a similar sized biscuit.

Here's our top tips:
- I recommend using icing sugar mixture for the biscuits but pure icing sugar for the icing (pure icing sugar sets firmer).
- Salted or unsalted butter can be used in the biscuits and the icing.
- Substitute the passionfruit pulp for lemon juice and finely grated lemon zest if you prefer.
- If using tinned passionfruit pulp, try to use as many pips as possible and don't overload the liquid as it will make your icing too runny.
- Don't overcook the biscuits - they should be soft, crumbly and melt-in-your-mouth.
- Ensure the biscuits have completely cool before adding the icing (otherwise it will melt!)
- Sandwich similar-sized biscuits together with the icing.
- Store in an airtight container at room temperature for up to 1 week.
- Freeze leftovers for up to 1 month.

Thermomix Passionfruit Melting Moments

Ingredients
For The Biscuits
- 225 g plain flour
- 75 g cornflour
- 250 g butter softened
- 2 teaspoon vanilla extract
- 80 g icing sugar mixture
For The Filling
- 120 g butter softened
- 165 g pure icing sugar
- 3 teaspoon passionfruit pulp
Instructions
- Preheat oven to 160 degrees celsius (fan-forced).
- Line two baking trays with greaseproof paper.
- Place the plain flour and cornflour into the Thermomix bowl and sift for 20 seconds, Speed 4. Set aside in a seperate bowl.
- Place the butter, vanilla and icing sugar into the Thermomix bowl and mix for 40 seconds, Speed 3. Scrape down the sides of the bowl and repeat.
- Add the reserved flour/cornflour mixture and mix for 20 seconds, Speed 3. Scrape down the sides of the bowl and mix for a further 10 seconds.Note: if the mixture is too sticky, add a little more flour and mix through.
- Roll teaspoonfuls of mixture into balls.Place onto the prepared trays, about 3cm apart.Use a fork dusted with cornflour to gently flatten.
- Bake for 15 minutes or until lightly golden and cooked through.
- Allow to cool on the tray for 10 minutes before transferring to a wire rack to cool completely.
- To make the filling, place the butter and icing sugar into a clean and dry Thermomix bowl. Mix for 30 seconds, Speed 4.
- Add the passionfruit pulp and mix for 10 seconds, REVERSE, Speed 3.
- Spread a small amount of filling onto the flat side of one of the biscuits. Sandwich with a similar sized biscuit.
- Repeat until all of the biscuits have been used.
