Our Thermomix Passionfruit Melting Moments taste just like your favourite cafe-bought biscuits! Melt-in-your-mouth biscuits sandwiched together with a sweet, creamy passionfruit icing.

    Passionfruit icing inside biscuits.

One of my very favourite treats to order with a coffee is a melting moment biscuit!

The buttery-ness combined with that sweet icing is just the BEST!!!

However, you can make an entire batch of melting moments in your Thermomix for approximately the cost of ONE cafe bought biscuit.

So let's get baking and fill up the biscuit tin.

Why You're Going To Love This Recipe

    • Cafe-Style - you just can't beat a homemade version of your favourite cafe biscuit!
    • Simple Recipe - classic buttery biscuits filled with a simple icing... it doesn't get any better than Thermomix Passionfruit Melting Moments!
    • Old Fashioned Classic - these taste just like your grandma used to make... and they're just as popular as ever.
    • Versatile - don't like passionfruit? No problem! Use a small amount of lemon juice and lemon zest instead.
    • Freezer-Friendly - store any leftovers in the freezer for up to 1 month.

    What You Need

Our Thermomix Passionfruit Melting Moments are made using pantry and fridge staple ingredients... plus passionfruit pulp!

Please scroll to the recipe card at the bottom of the post for ingredient quantities and the full detailed method.

The ingredients for passionfruit melting moments.

    For The Biscuits

    • plain flour - also known as all purpose flour
    • cornflour - also known as cornstarch. Using cornflour gives the Thermomix Passionfruit Melting Moments that classic crumbly melt-in-your-mouth texture
    • butter - salted or unsalted butter can be used
    • vanilla extract - or vanilla essence
    • icing sugar - I recommend using icing sugar mixture (not pure icing sugar) for the filling as it is softer

    For The Passionfruit Icing

    • butter - you can use either salted or unsalted butter for this recipe. I recommend using salted butter as it cuts through the sweetness of the icing sugar.
    • pure icing sugar - unlike in the biscuits, I recommend pure icing sugar (not icing sugar mixture) for the filling as it sets firm.
    • passionfruit pulp - you can use fresh or tinned passionfruit pulp. If using tinned passionfruit pulp, try to get as many seeds as possible while not overdoing the liquid (or your icing will be too runny).

    Step By Step Instructions

Follow our simple steps for the perfect Thermomix Passionfruit Melting Moments!

Please scroll to the recipe card at the bottom of the post for ingredient quantities and the full detailed method.

    Step 1 - Sift

Place the plain flour and cornflour into the bowl and mix to sift.

    Expert Tips

Our Thermomix Passionfruit Melting Moments are so simple to make!

    Here's our top tips:

    • I recommend using icing sugar mixture for the biscuits but pure icing sugar for the icing (pure icing sugar sets firmer).
    • Salted or unsalted butter can be used in the biscuits and the icing.
    • Substitute the passionfruit pulp for lemon juice and finely grated lemon zest if you prefer.
    • If using tinned passionfruit pulp, try to use as many pips as possible and don't overload the liquid as it will make your icing too runny.
    • Don't overcook the biscuits - they should be soft, crumbly and melt-in-your-mouth.
    • Ensure the biscuits have completely cool before adding the icing (otherwise it will melt!)
    • Sandwich similar-sized biscuits together with the icing.
    • Store in an airtight container at room temperature for up to 1 week.
    • Freeze leftovers for up to 1 month.

    FAQS

What's the difference between yo yos and melting moments?

While they are very similar, they aren't the same! Yo yo biscuits contain custard powder whereas melting moments contain cornflour.

Can I make this in an older version of the Thermomix?

Yes! This recipe is suitable for use in all models of the Thermomix.

Hi Jenny, yes you can - just drain the tin so that it's not too liquidy.
