    Thermomix White Chocolate Hedgehog Slice

    Made with just five ingredients, our Thermomix White Chocolate Hedgehog Slice is just irresistible! This melt and mix recipe is based on the classic Hedgehog Slice recipe that you grew up with - only improved!

    You will love this simplicity of this slice, simply crush the biscuits, melt the ingredients and combine. How easy is that?! You can also make this White Chocolate Hedgehog Slice a few days in advance as it will store well when covered in the fridge.

    Ingredients

    Plain Sweet Biscuits - Marie biscuits or similar.

    Sweetened Condensed Milk

    Butter - I prefer to use unsalted butter.

    White Chocolate

    Desiccated Coconut

    How to Make White Chocolate Hedgehog Slice

    Step 1. Crush the biscuits and set aside until needed.

    Step 2. Place the sweetened condensed milk and butter into the Thermomix bowl and cook until the butter has melted and the mixture has combined.

    Step 3. Add the crushed biscuits and coconut and mix to combine.

    Step 4. Transfer the mixture to a prepared baking tray and smooth the surface.

    Step 5. Melt the white chocolate and drizzle over the top of the slice.

    Step 6. Place the slice into the freezer to set before cutting into pieces.

    Recipe Hints and Tips

    It is ok if there are large chunks of biscuit when you first crush them, the biscuits will be crushed further when they are incorporated with the other biscuits.

    If you cannot find Marie Biscuits, any type of plain biscuit such as Milk Arrowroot biscuits will also work.

    The mixture will be sticky when you transfer it to the baking dish.

    I have used two blocks of white chocolate to top this slice however you can also use just one.

    I do recommend using a high quality white chocolate for this recipe.

    Do not freeze white chocolate hedgehog slice.

    Store in an airtight container in the fridge and consume within 7 days.

    Can you freeze hedgehog slice?

    Hedgehog slice can be frozen if it is not iced. I do not recommend freezing this slice once it has been topped with chocolate.

    Marie Biscuits are a sweet, plain, vanilla flavoured biscuit that are made by Arnott's biscuits.

    Equipment

    • 1 x 28 x 18cm baking dish

    Ingredients

    • 250 grams sweet plain biscuits Marie Biscuits or similar
    • 395 grams sweetened condensed milk
    • 75 grams butter unsalted
    • 80 grams desiccated coconut
    • 360 grams white chocolate

    Instructions

    • Line an 18 x 28cm slice tin with baking paper and set aside until needed.
    • Place the biscuits into the Thermomix bowl and mix for 13 seconds, Speed 4. It's ok if there are still larger pieces. Transfer to a separate bowl until needed.
    • Without washing the bowl, add the sweetened condensed milk and butter to the Thermomix bowl and cook for 3 minutes, 60 degrees, Speed 2.
    • Scrape down the sides and add the crushed biscuits and desiccated coconut. Mix for 12 seconds, Speed 4.
    • Scrape down the sides and mix for a further 5 seconds, Speed 4.
    • Transfer the mixture to the prepared slice tin and smooth the surface.
    • Break the chocolate into squares and place into a microwave safe bowl. Cook for 30 second spurts until it has just melted.
    • Drizzle the chocolate over the top of the slice and place into the fridge (minimum of 6 hours) or until set.
    • Once set cut into pieces and serve.
