    Thermomix Apricot and Coconut Balls

    Made with just THREE ingredients, these Thermomix Apricot and Coconut Balls are the ultimate sweet snack! You can be enjoying these delicious little bites in less than 10 minutes and they can also be frozen too.

    • Dried Apricots
    • Desiccated Coconut
    • Sweetened Condensed Milk

    How to Make Thermomix Apricot and Coconut Balls:

    1. Chop the dried apricots until they are in small pieces.

    2. Add the desiccated coconut and sweetened condensed milk and mix until combined.

    3. Scoop up the mixture and roll into balls.

    4. Roll the balls in desiccated coconut and place into an airtight container.

    You will need half a tin of sweetened condensed milk for this recipe.

    Desiccated coconut is best used for this recipe.

    You can use any type of dried apricots.

    Store in an airtight container in the fridge and enjoy within one week.

    Equipment

    • Thermomix

    Ingredients

    • 250 grams dried apricots
    • 200 grams sweetened condensed milk
    • 130 grams desiccated coconut

    Extra

    • 130 grams desiccated coconut
    Prevent your screen from going dark

    Instructions

    • Place the extra coconut into a bowl to roll the balls, set aside until needed.
    • Place the dried apricots into the your Thermomix bowl and blitz using Turbo for 1 second 5 times - or longer if you want finer apricot chunks.
    • Add the sweetened condensed milk and coconut to your Thermomix bowl and mix together for 10 seconds on Speed 3 or until combined.
    • Use a tablespoon to scoop up the mixture and roll into balls. If you feel the mixture is too soft, simply add a little more coconut.
    • Roll the balls in the extra coconut and place into a container.
    • Once you have used all of the mixture, place the container into the fridge for one hour to allow the Thermomix Apricot and Coconut Balls to firm

      My recipe is double of yours. Which is exactly one packet of apricot and one can of condensed milk.

      These look like a great snack idea but my kids won't eat apricots. Do you think you could substitute them for something else? Not sure what though?
