    Thermomix Apple and Sour Cream Slice

    This simple and delicious Thermomix Apple and Sour Cream Slice is just like the classic slice you will find at your local bakery!

    With a buttery base, and sweet and delicious topping, you won't be able to resist this recipe.

    Versatile - use either a buttercake cake mix or follow the instructions below to make the base of this slice.

    Simple ingredients - You do not need any hard to source ingredients to make this slice.

    Classic recipe - this Apple and Sour Cream Slice is just like the one you grew up enjoying at your local bakery!

    Easy to prepare - even without using a packet mix, this Apple and Sour Cream Slice has minimal prep time.

    Ingredients

    Please note you will find the full list of ingredients and their quantities in the recipe card below.

    You can use a buttercake cake mix to make the base of this slice, however it is just as easy to use self-raising flour and caster sugar instead. You will also need desiccated coconut, butter which has been melted, canned apple slices, sour cream and cinnamon sugar. If you are unable to source cinnamon sugar, you can use ground cinnamon instead.

    How to make Apple and Sour Cream Slice in a Thermomix

    Find the full method in the recipe card below.

    Step 1. Add butter to Thermomix bowl and cook until melted.

    Step 2. Add remaining base ingredients and mix to combine.

    Step 3. Place the mixture into the base of lined baking dish and push down with the back of a spoon to flatten. Place into a pre-heated oven to bake.

    Step 4. Add apple pieces.

    Step 5. Top the slice with sour cream and then spread over the top of the slice.

    Step 6. Sprinkle with cinnamon sugar - or ground cinnamon.

    Step 7. Place into the oven and bake.

    Step 8. Allow slice to completely cool before cutting into pieces.

    Frequently Asked Questions

    How long will Apple and Sour Cream Slice keep for?

    Once baked, this slice will keep for up to five days when stored in an airtight container in the fridge. You may find the base does begin to soften.

    Can you freeze Apple and Sour Cream Slice?

    This slice is best enjoyed after it has been baked. I do not recommend freezing it as the consistency of the sour cream layer will change when defrosted.

    Do you have to use a cake mix when making Apple and Sour Cream Slice?

    No you do not. Although a 340 gram buttercake cake mix can be used, this can also be substituted with 200 grams of self-raising flour and 140 grams of caster sugar.

    Recipe Tips

    If you would prefer to use cake mix, you will need a 340gram vanilla cake or buttercake mix for this recipe.

    Use light or regular sour cream for the topping. I find using a spatula to spread the sour cream over the surface to be the easiest way.

    Cinnamon Sugar can be found in the spices and herbs section of your local supermarket. You can also use ground cinnamon if preferred.

    Homemade stewed apples can be used in place of tinned apples, however you will need to drain off excess fluid.

    This classic Apple and Sour Cream Slice recipe is just like the bakery classic you grew up with.

    Equipment

    • 1 x 18 x 28 cm slice tray
    • Baking Paper

    Ingredients

    • 125 grans butter
    • 200 grams self-raising flour
    • 140 grams caster sugar
    • 80 grams desiccated coconut
    • 1 teaspoon vanilla extract
    • 400 grams canned apple slices
    • 300 grams sour cream
    • 1 tablespoon cinnamon sugar

    Instructions

    • Pre-heat oven to 180 degrees celsius (fan-forced) and line the base and sides of an 18 x 28cm slice tin with baking paper.
    • Add the butter to the Thermomix bowl and cook for 3 minutes, 60 degrees, Speed 2 or until melted.
    • Add the self-raising flour, caster sugar, coconut and vanilla extract and mix for 10 seconds, Speed 4. Scrape down the sides of the bowl and mix for a further 5 seconds, Speed 4.
    • Transfer the mixture to the prepared slice tray and push down with the back of a spoon to flatten the surface. Bake for 15 minutes before allowing to cool for 10 minutes.
    • Add the tinned apples and gently smooth the surface.
    • Add the sour cream and use a spatula to gently smooth.
    • Sprinkle with cinnamon sugar (or ground cinnamon) and return to the. oven to bake for a further 20 minutes.
    • Carefully remove from the oven and allow the slice to completely cool before cutting into pieces.
    • Store in an airtight container in the fridge for up to five days.
