    Our simple melt and mix Thermomix White Christmas recipe is packed with dried cranberries, sultanas, pistachios and coconut! Just 10 minutes prep time.. then chill in the fridge.

    White Christmas is such an old fashioned favourite during the festive season... and our Thermomix version couldn't be easier to make!

    Fill this crunchy chocolate rice bubble slice with all your favourite nuts and dried fruits.

    The ingredients for Thermomix White Christmas.
    • White Chocolate - I recommend using white chocolate melts as they melt easier than regular white chocolate
    • Rice Bubbles - or any brand of puffed rice
    • Coconut - use dry desiccated coconut
    • Dried Fruits - I like to use craisins and sultanas, however, chopped dried apricots and currants are also great options!
    • Nuts - I like to use pistachios but slivered almonds work well too!

    Step By Step Instructions

    Lets make White Christmas in the Thermomix!

    Step 1 - Melt

    Place the white chocolate into the Thermomix bowl and heat until smooth and melted.

    Step 2 - Mix

    Add the coconut, Rice Bubbles, dried fruits and nuts to the bowl.

    Mix on REVERSE until combined.

    Step 3 - Chill

    Working quickly, pour the mixture into a prepared baking tin and spread out evenly with the back of a spoon.

    Chill in the fridge until set.

    Expert Tips

    • you can substitute the dried fruit and nuts with any that you prefer!
    • once you've mixed the white chocolate with the add ins, work quickly to pour it into the prepared tin as it will begin to set.
    • chill in the fridge for 4 hours or until set.
    • storing the slice in an airtight container in the fridge will ensure that the Rice Bubbles stay crunchy.
    • store in the fridge for up to 1 week.
    • freeze for up to 1 month.

    FAQs

    Why do I need to mix using REVERSE?

    Once you've added the Rice Bubbles, nuts, fruits and coconut, you want to blades to stir rather than chop. Mixing on REVERSE ensures that the mixture is gently stirred.

    Can I give this as a homemade gift?

    White Christmas makes a delicious Christmas gift. Pop a few pieces into a cellophane bag and tie with a ribbon. Alternatively, add it to a Christmas food hamper.

    Can I make this recipe without a Thermomix?

    Yes you can - simply melt the chocolate in the microwave or in a double boiler on the stovetop and then mix in a large bowl with a spoon.

    Our simple no-bake Thermomix White Christmas recipe is filled with dried craberries, sultanas and pistachios.

    Equipment

    • Thermomix

    Ingredients

    • 450 g white chocolate
    • 30 g Rice Bubbles or any puffed rice
    • 125 g dried cranberries
    • 130 g sultanas
    • 80 g pistachios
    • 60 g desiccated coconut
    Prevent your screen from going dark

    Instructions

    • Grease and line an 18cm X 28cm slice tin with baking paper and set aside.
    • Place the white chocolate into a clean and dry Thermomix bowl.
      Grate for 10 seconds, Speed 5. Scrape down the sides of the bowl.
    • Melt the chocolate for 4-5 minutes, 60 degrees, Speed 2 (or until melted).
    • Add the Rice Bubbles, dried cranberries, sultanas, pistachios and desiccated coconut.
      Mix on REVERSE, Speed 2 until combined (use the spatula through the MC hole to help mix).
    • Spread the mixture into the prepared tin and press down firmly.
    • Refrigerate for 4 hours or until set.
