Grease and line an 18cm X 28cm slice tin with baking paper and set aside.
Place the white chocolate into a clean and dry Thermomix bowl. Grate for 10 seconds, Speed 5. Scrape down the sides of the bowl.
Melt the chocolate for 4-5 minutes, 60 degrees, Speed 2 (or until melted).
Add the Rice Bubbles, dried cranberries, sultanas, pistachios and desiccated coconut. Mix on REVERSE, Speed 2 until combined (use the spatula through the MC hole to help mix).
Spread the mixture into the prepared tin and press down firmly.
Refrigerate for 4 hours or until set.

RECIPE NOTES & TIPS
you can substitute the dried fruit and nuts with any that you prefer!
Dried Fruits - I like to use craisins and sultanas, however, chopped dried apricots and currants are also great options!
Nuts - I like to use pistachios but slivered almonds work well too.
once you've mixed the white chocolate with the add ins, work quickly to pour it into the prepared tin as it will begin to set.
chill in the fridge for 4 hours or until set.
storing the slice in an airtight container in the fridge will ensure that the Rice Bubbles stay crunchy.
