Our Thermomix Gingernut Log is made with Arnott's gingernut biscuits in place of the choc ripple biscuits.
For the ultimate flavour and texture, the gingernut biscuits are dipped in orange juice (or brandy for an adults-only boozy option), then coated with caramel whipped cream into a log shape.
When you're ready to serve, simply drizzle over extra caramel sauce.

- Arnott's Gingernut Biscuits - you can purchase these from any major supermarket in Australia. If you can't buy Arnott's gingernuts, you can replace them with any plain ginger flavoured biscuit or cookie.
- Thickened Cream - for whipping
- Caramel Sauce - use a store-bought caramel sauce or make your own!
- Orange Juice or Brandy - to soften the biscuits and give the log some extra flavour, quickly dip them into either orange juice (for a kid-friendly option) or brandy (for a more traditional option).
Step By Step Instructions
Let's make a classic Gingernut Log using the Thermomix!

Step 1 - Make The Caramel Whipped Cream
Insert the Butterfly attachment into the Thermomix bowl.
Add the cream and the caramel sauce.
Whip on Speed 3 until soft peaks form.
Remove the Butterfly attachment and set the cream aside.
Step 2 - Dip The Biscuits
Very quickly (for 1 second), dip the biscuits into a small bowl or ramekin filled with orange juice (or brandy).
Allow any excess liquid to drip off.
Step 3 - Assemble The Log
Spread one teaspoon of the whipped cream onto the flat side of a gingernut biscuit.
Sandwich together with more biscuits and cream until you have a stack.
Place the stack onto a serving dish (with a little extra cream spread on the bottom).
Repeat with extra biscuits and cream until all of the biscuits have been used up.
Cover the entire log in the remaining whipped cream and refrigerate overnight.
When you're ready to serve, remove the log from the fridge, drizzle with extra caramel sauce and serve.

Ingredients
- 600 ml thickened cream
- 45 g caramel sauce plus extra for decorating
- 250 g Arnott's gingernut biscuits
- 200 g orange juice or brandy
Instructions
- Insert the Butterfly into the Thermomix bowl. Add the cream and caramel sauce and mix on Speed 3 until soft peaks form.
- Spread some of the caramel whipped cream along the base of your serving dish.
- Hold one gingernut biscuit in your hand and quickly dip it into a small deep bowl filled with orange juice (or brandy). Spread a teaspoon of caramel whipped cream onto the flat edge and place another gingernut biscuit on top. Repeat until you have a small stack of biscuits in your hand.
- Place the stack standing upright onto the cream on the serving plate. Repeat with another few biscuits and then join that stack to the serving platter to form a log.
- Repeat until all of the gingernut biscuits have been used.
- Use the remaining caramel whipped cream to spread over the entire outside of the log.
- For best results, place in the fridge overnight before serving (as this will allow the biscuits to soften). Decorate with extra caramel sauce.
