    What You Need

    Our Thermomix Spinach and Cheese Pie is made using a handful of ingredients!

    The ingredients for spinach and feta pie.
    • Parmesan Cheese - use a sharp flavoured block of parmesan cheese.
    • Tasty Cheese - or any cheddar cheese.
    • Onion - use a brown onion and chop it in half.
    • Garlic - use fresh garlic cloves or minced garlic in a jar.
    • Olive Oil - use a mild olive oil.
    • Feta - use a soft, creamy feta (such as Danish feta).
    • Eggs - use large eggs (at room temperature).
    • Sour Cream - full cream sour cream is best!
    • Nutmeg - use ground nutmeg.
    • Spinach - use baby spinach leaves.
    • Filo Pastry - this can be purchased from the frozen pastry section of the supermarket.
    • Butter - melted. For spreading on the filo pastry sheets.

    Step By Step Instructions

    It takes just 20 minutes to prepare this Thermomix Spinach and Cheese Pie!

    Step 1 - Grate The Cheese

    Place the parmesan cheese and tasty cheese into the Thermomix bowl.

    Mix until grated. Set aside.

    Step 2 - Saute The Onion & Garlic

    Chop the onion and garlic.

    Saute with the olive oil until softened.

    Step 3 - Mix

    Add the feta, eggs, sour cream, nutmeg, the reserved grated cheeses and salt and pepper to the bowl.

    Mix until combined.

    Step 4 - Add The Spinach

    Add half of the baby spinach leaves and mix through.

    Add the remaining half and mix again.

    Step 5 - Assemble The Pie

    Brush each sheet of filo pastry with the melted butter and place one on top of another.

    Place the pastry into the prepared baking dish.

    Pour the filling on top of the pastry.

    Bake for 40 minutes or until golden on top and cooked through.

    Expert Tips

    • Allow the filo pastry to defrost before using.
    • The filo pastry is very delicate so be careful when brushing over the butter.
    • Add the baby spinach in two seperate lots (this avoids overloading the Thermomix bowl).
    • Use a soft feta (like Danish feta).
    • Bake the pie until golden on top and cooked through in the centre.
    • Store in an airtight container in the fridge for up to 3 days.
    • Freeze for up to 3 months. Allow to defrost in the fridge before reheating.
    • Reheat in the oven for crispy pastry.

    Can I make this using any model of the Thermomix?

    Yes, this recipe is suitable for use in all models of the Thermomix.

    Can I use regular spinach instead of baby spinach?

    Yes, just make sure you chop it into smaller pieces before using.

    How do I know when the pie is cooked?

    The top will be golden and the egg in the centre of the pie will be cooked through.

    Ingredients

    • 50 g parmesan cheese
    • 90 g tasty cheese
    • 1 brown onion halved
    • 2 garlic cloves or 2 teaspoon minced garlic
    • 15 g olive oil
    • 200 g feta
    • 4 eggs
    • 300 g sour cream
    • ½ teaspoon nutmeg
    • salt and pepper
    • 200 g baby spinach leaves
    • 8 sheets filo pastry
    • 50 g butter melted
    Prevent your screen from going dark

    Instructions

    • Preheat your oven to 180 degrees celsius (fan-forced).
    • Place the parmesan and tasty cheese (cut into 4cm cubes) into your Thermomix bowl and mix for 8 seconds, Speed 7.
      Transfer to a separate bowl and set aside until needed.
    • In a clean Thermomix bowl, add the onion (cut in half), garlic and olive oil and mix for 4 seconds, Speed 6. Cook for 3 minutes, 90 degrees, Speed 2.
    • Add the feta, eggs, sour cream, grated cheeses, nutmeg, a pinch of salt and pepper to your Thermomix bowl and mix for 20 seconds, Speed 4.
    • Add 100g of the baby spinach leaves and mix for 10 seconds, Speed 3. Add the remaining 100g and mix for a further 15 seconds, Speed 3.
    • Place a piece of the filo pastry onto your bench and brush it with a little melted butter. Top it with another sheet of filo pastry and again brush this with the melted butter. Repeat until you have used all of the sheets of pastry.
    • Carefully transfer the pastry into a 20cm square baking dish and cut away any excess pastry which is hanging over the sides.
    • Pour the filling into the dish and gently smooth the surface.
      Place into the oven and bake for 40 minutes or until golden.

      Hello, I unfortunately can not eat pastry, can the filling be cooked in a baking dish on its own? would it setup?

        Hi Sarah, I'm not sure how it would set without the filling, could you try it with wraps instead?

        Hi I have the same problem... ( I love pastry but it doesn't love me).

        It should just turn out like a crustless quiche would.

        I bake my crustless quiche at 180° for approx 40 mins.

        Hello, I freeze this after baking and then reheat at 190 degrees for around 15/20 minutes x
