250gramssweet plain biscuitsMarie Biscuits or similar
395grams sweetened condensed milk
75gramsbutterunsalted
80gramsdesiccated coconut
360gramswhite chocolate
Instructions
Line an 18 x 28cm slice tin with baking paper and set aside until needed.
Place the biscuits into the Thermomix bowl and mix for 13 seconds, Speed 4. It's ok if there are still larger pieces. Transfer to a separate bowl until needed.
Without washing the bowl, add the sweetened condensed milk and butter to the Thermomix bowl and cook for 3 minutes, 60 degrees, Speed 2.
Scrape down the sides and add the crushed biscuits and desiccated coconut. Mix for 12 seconds, Speed 4.
Scrape down the sides and mix for a further 5 seconds, Speed 4.
Transfer the mixture to the prepared slice tin and smooth the surface.
Break the chocolate into squares and place into a microwave safe bowl. Cook for 30 second spurts until it has just melted.
Drizzle the chocolate over the top of the slice and place into the fridge (minimum of 6 hours) or until set.
Once set cut into pieces and serve.
Notes
It is ok if there are large chunks of biscuit when you first crush them, the biscuits will be crushed further when they are incorporated with the other biscuits.If you cannot find Marie Biscuits, any type of plain biscuit such as Milk Arrowroot biscuits will also work.The mixture will be sticky when you transfer it to the baking dish.I have used two blocks of white chocolate to top this slice however you can also use just one.I do recommend using a high quality white chocolate for this recipe.Do not freeze white chocolate hedgehog slice.Store in an airtight container in the fridge and consume within 7 days.
