This Thermomix Mint & Cucumber Raita Dip is fast, fresh and packed full of flavour! Serve it with homemade roti bread and your favourite curry or meat dish.
Place the mint leaves into the Thermomix bowl. Chop for 5 seconds, Speed 8. Scrape down the sides and repeat until roughly chopped.
Cut the cucumber into 6 pieces and scrape out the seeds (discard). Use a paper towl to dry the cucumber.
Place the dried cucumber pieces into the Thermomix bowl and press Turbo for 2-3 seconds or until roughly chopped. Scrape down the sides of the bowl. Remove any excess liquid.
Add the yoghurt, cumin, lemon juice, salt and pepper. Mix for 10 seconds, Speed 3, or until combined.
Pour into a bowl and place into the fridge for 2 hours.
Serve with roti bread or curry.
Notes
RECIPE NOTES & TIPS
remove all of the seeds from the cucumber. Dry the cucumber pieces with a paper towel to remove any excess liquid.
for best results use a good quality thick greek or natural yoghurt
chill the dip for 2 hours in the fridge - this allows the flavours to develop and the dip to thicken
