Thermomix Mars Bar Cheesecake

This Thermomix Mars Bar Cheesecake recipe is a great no bake dessert which is perfect for your next party, gathering or even Christmas!

Equipment

Ingredients

For the base

  • 90 grams butter
  • 200 grams Oreo Biscuits (or Chocolate Ripple biscuits)

For the filling

  • 7 Mars Bars 47 gram bars
  • 1 teaspoon vanilla extract
  • 500 grams cream cheese softened
  • 130 grams thickened cream
  • 110 grams caster sugar

Instructions

  •  Line the base of a 22cm springform tin with baking paper and lightly grease the sides and finely chop two Mars Bars into pieces – set aside until needed.
  • Cut the butter in half and place into your Thermomix bowl.  Cook for 2 minutes, 60 degrees, Speed 3 or until melted.
  • Add the Oreo (or chocolate ripple) biscuits and mix for 10 seconds, Speed 9.  Use your spatula to scrape down the sides and mix again for another 10 seconds, Speed 7.
  • Pour the biscuit mixture into your prepared tin and use a large metal spoon to cover the base with the biscuit mixture and flatten the surface.
  • Cut four of the Mars Bars into quarters and place them into a clean Thermomix bowl.  Chop them for 10 seconds, Speed 7 before cooking them for 3 minutes60 degreesSpeed 2 or until melted.
  • Add the vanilla extract, cream cheese, cream and caster sugar to the Thermomix bowl and mix for 30 seconds, Speed 5. Scrape down the sides and mix for another 30 seconds, speed 5.
  • Add ONE of the reserved chopped Mars Bars to the Thermomix bowl and mix for 20 seconds, REVERSE, Speed 2.
  • Pour the cheesecake mixture over the biscuit base and top with the remaining reserved Mars Bar pieces.
  • Place in the fridge to set for a minimum of eight hours, preferably overnight.

Notes

We use 7 x 47 gram Mars Bars for this recipe. You can also use 'fun size' Mars Bars. Please note that two of the Mars Bars are used to decorate the cheesecake. You can omit these if you wish and use just five bars for the cheesecake filling.
You can substitute the Oreos in the base of this recipe for Chocolate Ripple biscuits if your prefer.
The mixing and melting times may vary depending on the temperature/ softness of the butter, cream cheese and Mars Bars being used. I suggest using cream cheese and Mars Bars which are both at room temperature and are soft.
We recommend making this Mars Bar Cheesecake the day before you plan to serve it, while it will set in approximately 8 hours, for best results you want to leave it overnight.
This cheesecake is quite soft as it doesn’t contain gelatine. If your cheesecake is too soft when you cut it – pop it back in the fridge to let it set for a bit longer.
