Place the egg yolk, mustard and apple cider vinegar into the Thermomix bowl and mix for 10 seconds, speed 4.
Scrape down the sides of the bowl and set the timer to 3 minutes, speed 4. Then VERY slowly add the oil. It should take you the full 3 minutes to add it all.
Add the salt and mix for a further 20 seconds, speed 4.
Transfer the mayonnaise to an airtight container/jar and place into the fridge to chill. Please note, the mayonnaise will thicken as it cools.
Notes
For best results ensure all ingredients are at room temperature. This will help the ingredients to bind.Any type of light flavoured oil can be used to make mayonnaise. Sunflower, Grapeseed or Vegetable Oil are all other options.We use 70 gram eggs when making this recipe.You can also add a pinch of pepper to your mayonnaise.
