Preheat the oven to 160 degrees celsius (fan forced). Grease and line a 23cm springform pan and set aside.
Place the dark chocolate melts, honey and sugar into the Thermomix bowl. Melt for 3 minutes, 60 degrees, Speed 3 (or until melted).
Add the plain flour, cocoa powder, spices and salt and mix for 10 seconds, Speed 8. Scrape down the sides of the bowl and repeat.
Add the toasted nuts and dried fruits. This mixture will be SO sticky and thick that you won't be able to mix it using the Thermomix. Use the spatula and your muscles to mix until combined!
Press the mixture into the prepared springform pan.
Bake for 30 minutes.
Allow to cool completely in the pan before cutting into thin slices.

RECIPE NOTES & TIPS
I recommend using dark chocolate melts instead of regular dark chocolate (as they melt easier)
ensure that the nuts are toasted before using for the ultimate crunch and taste
dried figs and candied mixed peel can be found in the dried fruits/nuts aisle of the supermarket
do not overcook the panforte
store the Thermomix panforte in the fridge or at room temperature for up to 3 weeks
