Thermomix Peppermint Crisp & Cherry Ripe Balls

Delicious Peppermint Crisp & Cherry Ripe Balls made with choc ripple biscuits, coconut and sweetened condensed milk!

Ingredients

  • 250 g Arnotts Choc Ripple biscuits
  • 1 Peppermint Crisp bar
  • 1 Cherry Ripe bar
  • 130 g desiccated coconut plus extra for coating
  • 395 g sweetened condensed milk

Instructions

  • Place the choc ripple biscuits, Peppermint Crisp bar, Cherry Ripe bar and coconut into the Thermomix bowl.
    Crush for 10 seconds, Speed 8.
  • Add the sweetened condensed milk and mix for 10 seconds, Speed 3. Scrape down the sides of the bowl and repeat.
  • Roll heaped teaspoonfuls of mixture into balls and coat in the extra coconut.
    Note: if your mixture is too soft to roll into balls, add a little extra coconut and mix again.

Notes

RECIPE NOTES & TIPS
  • Use Arnott's choc ripple biscuits for the best results.
  • You can use a combination of Peppermint Crisp and Cherry Ripe bars, or use just one variety.
  • For a stronger flavour use 2 of each variety of bars (4 in total).
  • If your mixture is too soft, add a little extra coconut and mix through.
  • For best results, use full fat (not light or skim) sweetened condensed milk.
  • Store in the fridge in an airtight container for up to 5 days.
  • Freeze in an airtight container for up to 2 months.
