- 200 g pitted medjool dates
- 20 g honey
- 50 g desiccated coconut
- 20 g chia seeds
- 3 tablespoon water
- 60 grams currants or sultanas
Place all ingredients (except for the water and currants/sultanas) into the Thermomix bowl. Mix for 10 seconds, Speed 8.
If the mixture is too crumbly to roll into firm balls, add the water and mix for a further 5 seconds, Speed 5.
Add the currants/sultanas and mix for 5 seconds, REVERSE, Speed 2.
Roll into firm balls and store in an airtight container in the fridge.
RECIPE NOTES & TIPS
- you can use currants or sultanas - however, I find that currants are easier when rolling the mixture.
- if your mixture is too crumbly to roll into firm balls, add a little extra water and mix again.
- once you've added the currants to the bowl, ensure that you mix on REVERSE so that the blades don't chop the currants.
- if serving to children under 1 year of age, omit the honey.
- store in an airtight container in the fridge for up to 1 week.
- freeze for up to 3 months.
