Thermomix Weet-Bix Balls

Ingredients

  • 5 Weet-Bix
  • 200 g pitted medjool dates
  • 20 g honey
  • 50 g desiccated coconut
  • 20 g chia seeds
  • 3 tablespoon water
  • 60 grams currants or sultanas

Instructions

  • Place all ingredients (except for the water and currants/sultanas) into the Thermomix bowl. Mix for 10 seconds, Speed 8.
  • If the mixture is too crumbly to roll into firm balls, add the water and mix for a further 5 seconds, Speed 5. 
  • Add the currants/sultanas and mix for 5 seconds, REVERSE, Speed 2.
  • Roll into firm balls and store in an airtight container in the fridge.

Notes

RECIPE NOTES & TIPS
  • you can use currants or sultanas - however, I find that currants are easier when rolling the mixture.
  • if your mixture is too crumbly to roll into firm balls, add a little extra water and mix again.
  • once you've added the currants to the bowl, ensure that you mix on REVERSE so that the blades don't chop the currants.
  • if serving to children under 1 year of age, omit the honey.
  • store in an airtight container in the fridge for up to 1 week.
  • freeze for up to 3 months.
