Thermomix Sticky Date Pudding

This classic Thermomix Sticky Date Pudding will quickly become your families new favourite dessert.

Equipment

  • 1 x 22cm square baking dish 2 litre capacity
  • Thermomix

Ingredients

  • 220 grams pitted dates
  • 1 teaspoon vanilla extract
  • ¾ teaspoon bicarbonate of soda
  • 200 grams water
  • 90 grams butter softened
  • 100 grams caster sugar
  • 50 grams brown sugar for the pudding
  • 2 eggs
  • 180 grams self raising flour
  • 1 teaspoon cinnamon

Caramel Sauce

  • 140 grams butter
  • 120 grams thickened cream
  • 1 teaspoon vanilla extract
  • 150 grams brown sugar

Instructions

  • Pre-heat your oven to 180 degrees celsius (fan-forced) and lightly grease a 2 litre capacity, 22cm square baking dish.
  • Add the water to your Thermomix bowl. Heat for 3 minutes, Varoma temperature, speed 1 or until the temperature reaches 100 degrees.
  • Add the pitted dates and let the mixture stand for 5 minutes.
  • Add the vanilla extract and bicarbonate of soda and mix for 10 seconds, speed 4 to combine.
  • Add the butter, caster sugar and brown sugar to the bowl and mix for 10 seconds, Speed 5.
  • Add the eggs, self raising flour and cinnamon and mix for 5 seconds, Speed 4. Scrape down the sides of the bowl and mix for a further 5 seconds, Speed 4. If mixture has not yet combined, mix for a further 5 seconds, speed 4.
  • Pour the mixture into the prepared baking dish. Place into the oven and bake for 35 - 40 minutes or until golden and cooked through when tested with a skewer.
  • In a clean Thermomix bowl, add the caramel sauce ingredients and cook for 8 minutes, Varoma temperature, Speed 2.  
  • Pour the caramel sauce over the hot Pudding and serve immediately.

Notes

  • When making the pudding, either dark or regular brown sugar can be used.
  • A 22cm square baking dish was used to prepare this recipe, if using a smaller or larger baking dish, the cooking time will be different.
  • Thickened cream is required to make the caramel sauce, don’t use pouring or light cream.
  • I like to prepare the caramel sauce when the pudding goes into the oven. This allows the sauce time to thicken. Alternatively, you can make the sauce when there is approximately 15 minutes of cooking time remaining.
  • This Pudding is best served while it is still warm.
  • Top your Sticky Date Pudding with ice-cream, cream or custard.
