Easy Thermomix Jelly Slice

Our famous and super easy Thermomix Jelly Slice recipe is simply the BEST! A classic no-bake slice that everyone loves!

Ingredients

For The Base

  • 200 g butter
  • 250 g Arnott's Marie biscuits or any other plain biscuit

For The Filling

  • tspns gelatine
  • ¾ cup boiling water
  • juice of 2 lemons (approx 90g)
  • 395 g sweetened condensed milk

For The Top Layer

  • 1 packet strawberry jelly crystals
  • boiling water as per jelly packet instructions
  • 1 tspn gelatine extra

Instructions

For The Base

  • Line the base and the sides of an 18 x 28cm slice tin with baking paper, making sure you leave plenty hanging over the sides.
  • Chop the butter and place it into the Thermomix bowl. Melt for 3 minutes, 80 degrees, Speed 2 (or until melted).
  • Add the biscuits and crush for 10 seconds, Speed 9. Scrape down the sides of the bowl and repeat for a further 5 seconds.
  • Remove the biscuit mixture from the bowl and pour into the lined tray.
    Push the mixture down with the back of a metal spoon to create a flat surface.
    Place in the fridge while you prepare the filling.

For The Filling

  • To make the filling, combine the gelatine in a jug with the boiling water and allow to cool slightly.
  • In a clean Thermomix bowl, add the lemon juice and sweetened condensed milk and mix for 45 seconds, Speed 3, with the measuring cup off.
    While the blades are turning, slowly pour the gelatine mixture into the bowl through the MC hole and mix until combined.
  • Remove the slice base from the fridge and pour over the filling.
    Place back into the fridge to set.

For The Top Layer

  • In a clean Thermomix bowl, add the hot water and heat for 3 minutes, 90 degrees, Speed 2.
  • Add the jelly crystals and gelatine and mix on Speed 2 until they have dissolved. Pour the jelly into a seperate bowl and allow it to cool to room temperature.
  • Remove the slice from the fridge and carefully pour the jelly over the top.
    Place it back in the fridge to set for approximately 4 hours (overnight is best).

Notes

RECIPE NOTES & TIPS
  • I recommend using Arnott's Marie biscuits, but you can use any plain, sweet biscuits you like!
  • Use freshly squeezed lemons (not bottled lemon juice). This helps to set the middle layer.
  • Use full fat (not skim) sweetened condensed milk as it sets firmer.
  • Allow the filling to set before pouring the cooled jelly over the top.
  • Make the jelly and then allow it to sit at room temperature to cool.
  • You can use any flavour of jelly crystals you like.
  • To cut the slice place it onto a chopping board. Use a large, flat, very sharp knife and press down firmly. Repeat until the entire slice has been cut into pieces.
  • Store jelly slice in the fridge for up to 5 days.
  • This recipe is not suitable for freezing.
