Equipment

  • Thermomix

Ingredients

  • 350 g watermelon chunks
  • 130 g vodka
  • juice of 1 lemon
  • lemonade to serve
  • fresh mint leaves to serve

Instructions

  • Place the seedless water melon chunks (with the rind removed) into the Thermomix bowl.
  • Puree for 10 seconds, Speed 8.
  • Add the vodka and lemon juice and mix for 10 seconds, Reverse, Speed 5.
  • Optional Step: if you'd like to remove the watermelon puree, pour the liquid through a sieve and into a jug.
  • Pour into glasses (fill about ¼ of the way to the top - more or less depending on how strong you'd like it).
  • Top up with lemonade and add mint leaves to garnish.

Notes

RECIPE NOTES & TIPS
  • for a low calorie option, use sugar-free lemonade
  • fresh mint is optional (but recommended) as a garnish
  • if you prefer (I do!), strain the watermelon liquid through a sieve and into a jug before diving between the glasses. This removes the watermelon puree.
  • This recipe can be doubled as long as it doesn't exceed the MAX line in your Thermomix.
  • to make your cocktails stronger, add more of the watermelon liquid to the glasses and less lemonade. For weaker cocktails, add less watermelon liquid and more lemonade.
