Thermomix Vanilla Custard

Ingredients

  • zest of 1 lemon
  • 100 g caster sugar
  • 50 g cornflour
  • 500 g full cream milk
  • 4 eggs
  • 1 teaspoon vanilla bean paste or vanilla extract

Instructions

  • Place the lemon zest, sugar and cornflour into the Thermomix bowl and mill for 10 seconds, Speed 9. Scrape down the sides of the bowl.
  • Add the milk, eggs and vanilla bean paste to the bowl. Cook for 7 minutes, 90 degrees, Speed 4.
  • Serve immediately.

RECIPE NOTES & TIPS
Ingredients Info: 
  • lemon zest - use only the yellow part of the lemon (not the white pith)
  • caster sugar - also known as superfine sugar
  • cornflour - this works as the thickener in this recipe
  • milk - use full cream milk (not light or skim)
  • vanilla bean paste - or vanilla essence or vanilla extract
More Recipe Tips:
Extra Thick Custard - If you would like your custard to be very thick, cook it for an extra 2-3 minutes (but remember that it will thicken on cooling).
Storing -  Store any leftover custard in an airtight container in the fridge. If you don't want to use your custard immediately, pour it into a bowl and place cling-wrap on top of the custard to stop it from forming a 'skin'.
