- 40 g cheese tasty or cheddar
- 250 g cream cheese softened
- 2-3 spring onions finely chopped
- 50 g mayonnaise
- 40 g sweet chilli sauce
Place the cheese into the Thermomix bowl and grate for 10 seconds, Speed 8.
Add the softened cream cheese, chopped spring onions, mayonnaise and sweet chilli sauce to the bowl.
Mix for 20 seconds, Reverse, Speed 4 (or until smooth).
Taste and add extra mayonnaise or sweet chilli sauce depending on your flavour preference.
Serve with crackers and vegetable sticks.
RECIPE NOTES & TIPS
- Use full fat cream cheese (like a block of Philly). You can use light cream cheese if you prefer.
- I recommend using whole egg mayonnaise for the best taste.
- Allow the dip to soften for 15 minutes at room temperature before serving.
- Add extra sweet chilli sauce and mayo to taste.
- Store in an airtight container in the fridge for up to 4 days.
- This recipe is not suitable for freezing.
- Serve with crackers, fruit, meats and cheeses on an antipasto board or grazing platter.
