Ingredients

  • 40 g cheese tasty or cheddar
  • 250 g cream cheese softened
  • 2-3 spring onions finely chopped
  • 50 g mayonnaise
  • 40 g sweet chilli sauce

Instructions

  • Place the cheese into the Thermomix bowl and grate for 10 seconds, Speed 8.
  • Add the softened cream cheese, chopped spring onions, mayonnaise and sweet chilli sauce to the bowl.
  • Mix for 20 seconds, Reverse, Speed 4 (or until smooth).
  • Taste and add extra mayonnaise or sweet chilli sauce depending on your flavour preference.
  • Serve with crackers and vegetable sticks.

Notes

RECIPE NOTES & TIPS
  • Use full fat cream cheese (like a block of Philly). You can use light cream cheese if you prefer.
  • I recommend using whole egg mayonnaise for the best taste.
  • Allow the dip to soften for 15 minutes at room temperature before serving.
  • Add extra sweet chilli sauce and mayo to taste.
  • Store in an airtight container in the fridge for up to 4 days.
  • This recipe is not suitable for freezing.
  • Serve with crackers, fruit, meats and cheeses on an antipasto board or grazing platter.
