This Thermomix Cinnamon Tea Cake recipe couldn’t be easier to make. Just like our Thermomix Cinnamon Cake, It contains just a few pantry staples, takes just a few minutes to put together and is just like eating a big cinnamon doughnut!

When you are making this recipe, don’t be worried by how thick the batter is – I promise you that it will work out.  Also while I’m all for using my Thermomix for  everything that I can, I honestly do find it easier to to melt the butter required for the topping in the microwave and then add the cinnamon and sugar, as it’s such a small amount it’s much easier to work with in a small bowl versus the Thermomix bowl.

This cake will serve around 8 people, however if you do have any leftovers, you can freeze this cake for up to two months.

  • The mixing time for this cake may vary depending on the temperature of your butter.
  • Your mixture will be quite thick – this is normal.
  • I find it easier to to melt the butter required for the topping in the microwave and then add the cinnamon and sugar, as it’s such a small amount it’s much easier to work with in a small bowl versus the Thermomix bowl.
  • It’s important to add the cinnamon topping while the cake is still warm, I like to add it just after it’s come out of the oven and is still in the baking tin.

Thermomix Cinnamon Tea Cake Recipe

This simple Thermomix Cinnamon Tea Cake Recipe is a perfect afternoon tea treat to go with your cup of tea. It needs just a few simple pantry ingredients and will be ready in no time.

Equipment

  • Thermomix

Ingredients

  • 65 grams butter softened
  • 110 grams caster sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 150 grams self raising flour
  • 80 grams milk

Cinnamon Topping

  • 10 grams melted butter
  • 1/2 tsp cinnamon
  • 2 tsp caster sugar

Instructions

  • Line a 20cm round cake tin with baking paper and preheat your oven to 170 degrees fan-forced.
  • Place all of the cake ingredients into your Thermomix bowl and mix for 10 seconds, speed 4.
  • Scrape down the sides of your Thermomix bowl and mix for a further 10 seconds speed 4 or until the mixture is creamy and combined.
  • Transfer the cake mixture to your prepared cake tin and gently smooth the surface.
  • Bake for 25 - 30 minutes or until the cake is cooked when tested with a skewer.
  • Carefully remove the cake from the oven and prepare the cinnamon topping mixture by combining all of the ingredients into a small bowl.
  • Use a pastry brush to top the still warm cake with the cinnamon mixture. Let the cake sit in the cake tin for 10 minutes before carefully transferring to a wire tray to cool completely.

    YUMMMM! I have had to make this cake 3 times in one week because it was such a hit with the family that we ended up taking it to friends places when we visited too and have passed the recipe on! So quick and easy and was yum, soft and delicious!
