Can you successfully freeze and defrost any of the truffles / balls. I like to make slices in advance (caramel slice, peppermint slice etc) to have in the freezer for when people drop by unexpectedly. Would these truffles work well too?

I find that sometimes when the truffles defrost, little bits of the filling burst out through the sides. My preference would be to freeze the balls before they're coated with chocolate and then coat them with melted chocolate when visitors arrive (you could do this while the balls are still frozen).
