I don’t know about you, but my boys just love to eat muesli bars and would happily eat them all day if I let them. While I don’t mind them enjoying the occasional store bought bar, I am conscious of just how much added sugar they contain – not to mention the cost of them! That’s why I decided to recreate their favourite muesli bar flavour – Apricot and Coconut.
These Thermomix Apricot and Coconut Bars have no added sugar apart from a little rice malt syrup which helps to bind them together. Recipes really don’t get much easier than this and you can have these ready to enjoy in around 45 minutes – perfect when you have hangry kids to feed!
Thermomix Apricot and Coconut Bars
- 100 g of rolled oats
- 130 g of wholemeal self raising flour
- 200 g of dried apricots
- 50 g of coconut
- 150 g of butter
- 1/4 cup of rice malt syrup
Preheat your oven to 180 degrees and line a 18 x 28cm slice tin with baking paper - make sure you leave paper hanging over the sides to help you remove the slice later.
Place the Rolled Oats, Dried Apricots, Flour and Coconut into your Thermomix bowl. Blitz for 10 seconds on speed 3. Pour the mixture into a separate bowl and set aside until needed.
Place the butter and rice malt syrup into the Thermomix bowl (no need to clean) and cook for 2 minutes at 90 degrees on speed 2 until the butter has melted and the mixture has combined.
Add the dry ingredients to the Thermomix bowl and combine for 20 seconds on speed 3 REVERSE to mix together.
Pour the mixture into your prepared tray and bake for 20 - 25 minutes or until the slice is beginning to brown on top.
Carefully remove the tray from the oven and allow the slice to completely cool before using the overhanging paper to transfer to your bench and cut into bars.
